Zucchini Turkey Skillet

We are in the midst of zucchini season and trying hard to eat up our zucchini from the garden. I've already made our popular pizza stuffed zucchini boats a few times using up several zucchini and we got our pizza fix at the same time. But this zucchini turkey skillet dish is really my favorite.  It's sort of take on shakshuka, the Middle Eastern egg and tomato dish.  I think you could make this zucchini skillet dish for a brunch, as well as for any dinner.  This is a recipe from Hannah Freese, RD and we make it a lot, even when it's not zucchini season because it's so easy and quick to make.   It's a good one-dish meal where you will get a good helping of vegetables and fiber without even trying.  The recipe says it will serve 4 but honestly, Bruce will eat half of this recipe.  I like it leftover for breakfast when I cook the eggs into the sauce.  You can make it for dinner with or without the eggs, depending on how hardy of a meal you want.  I...

Chicken, Artichoke, and Mushroom Casserole

Since we've been home from Hawaii, I've had the urge to cook some of my favorite recipes...plus some.  It always feels good to return from a trip and be able eat the comforts of home again.  The first day home I made my  Pumpkin Bean Chili  which lasted for a couple days.  It tasted so good especially being back in cold weather.  I make this recipe probably twice a month in the winter since it's a favorite.  Then I made a batch of  Clean Cream of Mushroom Soup , another favorite.  That was consumed immediately.  These two recipes were a real switch from all our Hawaiian vacation food, although we are still eating fresh pineapple daily.  I had received a whole new batch of recipes from  Hannah Freese, RD  for the month of February so I decided to make this new recipe from her and we loved it.  It definitely turns boring chicken breasts into an exciting concoction of flavors. I have so many frozen chicken breasts in the...

Tex-Mex Casserole

I have the perfect dish for your next tailgate party or fall brunch that you may be planning.  Or maybe you just want a nice, basic fall-ish dinner this week.  I loved this recipe so much I gave a serving to my neighbor, Ginny, and she loved it, too.  It's a perfect fall dish that I made from  Hannah Freese, RD .  We are still having a beautiful fall around here but the rain is suppose to start in two days and then we all go into hibernation... We were so lucky that our weather was gorgeous for our beloved Mariner baseball team who played their first home post season game in 21 years last weekend.  We only had one game at home because they were immediately eliminated from the playoffs after three loses to the Astros.  I can still hardly even talk about it after four days.  Below is the "before" photo.  There is no "after" photo because we were in an incoherent daze.  I can assure you, we were not smiling, more like exhausted and haggard....

Sweet Potato Shepherd's Pie

I'm still not putting up any new "summer" recipes yet because we're still waiting for summer weather to arrive.  Sorry to say, but by the end of May, we'd only had six hours of temperatures over 70 degree this year.  Yes, I said hours .  Our average temperature in May was 52.6 degrees.  I mean, it's almost laughable.  This is Seattle, after all.  I'm not complaining, just stating the facts.  It all means that we are still eating soups and comfort foods like this Sweet Potato Shepherd's Pie.  And I love my comfort foods and soups that rain brings along with it.  There is a reason why I've moved away from Seattle four times in my life and then moved back four different times.  Do I really love the rain that much or is it really about the comforting food we get to eat when it rains.  Actually, I think it's both. I call our weather "natural air-conditioning".  We have managed to squeeze in barbecues here and there, like for Memori...

Unstuffed Cabbage Rolls

Since we've been home from Hawaii, it's been a sloooooooooooow process getting back into my regular eating routine by following  Hannah Freese, RD's  eating plan.  I was very proud of myself in Hawaii by sticking to the plan most the time.  I felt the best I've felt on a vacation in a long time, full of energy and very active swimming and going for daily walks with no aches or pains like I usually have.  I can tell my joint replacements are working well and I felt so strong and healthy in Hawaii  until I got covid.  Yep, I got it.  Darn it.  First, my sister and her husband tested positive and three days later I tested positive so I had to isolate for 5 days by not leaving our condo.  My sister and her husband both had coughs so they checked into a new condo to isolate.  Bruce, mysteriously never got it for some reason...lucky guy!  My brother and his wife were also there in another condo and they never got it, either.  Th...
