Thai Chicken Peanut Pepper Salad

Summer has finally arrived in Seattle and we've been enjoying lots of my summer salad recipes.  This is a new one I made last night and I will definitely be making it again.  It is a whole meal in itself, made with chicken breast and lots of chopped veggies.  Bruce and I both loved it.  It is from  Hannah Freese, RD  who continues to send us recipes every month since I am an alumni member of her eating program.   I joined her program during my knee replacemen t rehab because my first knee replacement was a brutal experience so I decided to change my diet to a more "anti- inflammatory diet".  Her plan did wonders for me and I noticed changes right away.  I also like that she is a dietitian, just like me so I can relate to her.  She is up on all the latest research and I totally trust everything that she says. Bakery Nouveau

We've discovered our favorite neighborhood eatery this past week during our   second phase  of moving, Bakery Nouveau.   There is a lot of competition for bakeries in this town but I'd heard of Bakery Nouveau from multiple sources so we thought we better check it out. They are rated  #1  in the city and we happen to be lucky enough to have one of the two shops in Seattle in our neighborhood. The owners are William and Heather Leaman with 20 years experience in pastry, bread and chocolate. Need I say more?  William was the captain of the 2005 Bread Bakers Guild Team USA, where he led his team to victory at the Coupe du Monde de Boulangerie (World Cup of Baking). Our taste buds say they are champions, too. Happy St. Patrick's Day

I couldn't wait to get home from work today to our delicious   corned beef and cabbage   for St. Patrick's Day. I bought the Irish Soda Bread on Friday from Great Harvest Bakery , where I am a frequent, loyal customer because it's one of my all time favorite places. I love the sign on their store front:  "I don't like bread - said no one, ever."   And this time I got a free loaf because my bread card was used up, along with a free slice of bread that they always give you when you walk in.   I'm not sure which is better, the big, thick, hunk of sliced Irish Soda bread or the creamy, sweet butter that is always available to spread on it.  I have to eat it before I hit the road because driving and eating Great Harvest bread is very dangerous! DUGH - Driving Under Great Harvest - an accident waiting to happen. Corned beef and cabbage perfectly compliments the Great Harvest Irish Soda bread. (or is that suppose to be the other way around?) ...

Happy Thanksgiving

                                          Oops! A little mouse got into the pies last night. We had a pre-Thanksgiving gathering last night. We just can't wait to begin the eating! Nick, Sachiyo and Lauren arrived from Seattle safe and sound after an 8 hour drive, uneventful, thank goodness, just the way we like it considering traveling over two mountain passes! I raced home from work to eagerly await their arrival and they rolled in at about 6:00pm. Great timing. Dinner was waiting, of course… Dinner was barbec ued brisket, which we are still trying to figure out and perfect, (it still turned out too dry), my original "cheese  potatoes", broccoli and the pumpkin  rolls  (I went back to get more after our dog ate the first batch).
