Shrimp and Vegetable Fried Rice

Our 35th day of self-quarantine .  We are eagerly awaiting the governors press conference today because he's suppose to talk about outdoor recreation activities and maybe lift restrictions on golf, fishing and hunting.  Bruce is eager to hear this one because he wants to be able to play golf again.  It seems to me that golf would be safe enough.  Our state is taking things really slowly so we won't have a second wave hit us of the coronavirus .  Now, every time the governor comes on the air, we're eager to hear what will be the next thing to open.  Last week, he allowed construction workers to go back to work. (I'm so glad our remodel is all done.  We started our remodel one year ago exactly.)  Two neighborhood farmer's markets opened last week, too, with lots of restrictions but at least that's something.  Our neighborhood farmer's market hasn't started back up yet, but when it does, it will be interesting to see how it's changed.  They have them

Our days lately have been typical Seattle wet and dreary.  Not to mention that this is our 31st day of stay-at-home orders by the governor that began on March 23rd.  And there doesn't seem to be much to look forward to, although the coronavirus cases are decreasing now, so that's good.  Our state is doing much better than other states since we're obeying the guidelines outlined by the health department plus it started really early here, way before March 23rd.  Heck, I sent the email out to cancel our Mariner ticket party on March 5th!  Cruises were still leaving packed with people  from Florida every week.  I remember thinking how crazy those people were but the rest of the country wasn't even thinking about coronavirus.  My thoughts are this:  it isn't going away so we're just going to have to deal with it until there is a vaccine.  When stay-at-home orders are lifted, the virus is still going to be out there and we're still going to get it.  It'

Skillet-Roasted Lemon Chicken

The weather is trying to be Spring but it's still chilly so an oven baked chicken recipe sounded good to me tonight.  Bruce wanted to barbecue but it just didn't feel like barbecue weather.  We did barbecue chicken recently but that was really pushing it.  I made this recipe from Ina Garten where she's posting recipes easy to make from your current kitchen pantry.  I had all these ingredients so it made for a wonderful Sunday dinner.  This recipe is from her cookbook Cooking for Jeffrey,  known as the luckiest husband in the world. LOL  I should write a cookbook called Cooking for Bruce .  He feels lucky to be able to eat all the recipes I cook but he helps a lot, too, like this Dutch baby  we had for breakfast today. Easter 2020

I will admit, this was a different kind of Easter but not necessarily food-wise.  We ate REAL good this year.  The sad part was not being able to share it with other's and partake in this wonderful time of year with my family.  I made my  Easter Bread  and divided it into two smaller loaves so I could take one over to Lauren, so I did get to share some of it, although I didn't get to see the shear joy on her face from eating it. That is probably my favorite part of cooking - watching other people eat it. Since we are all encouraged to wear masks now, we have three N95 masks that Bruce had in his car for when he visits construction sites.  I told Lauren I would bring one over to her on Saturday so I also decided to take her over a loaf of Easter bread while I was at it.  She was much appreciative and it was good to see each other.  We met outside her apartment building and then I waited while she took the bread up into her apartment.  Then we went for a walk around her neig

Parmesan Chicken

Our local grocery store often has BOGO deals that means Buy One, Get One and of course, I always go for it.  The store will usually have four weeks in a row of such deals and often include steak, salmon fillets, and good old chicken breasts.  They aren't doing BOGO now because of the coronavirus but I still have a few of their packages of BOGO meats in the freezer that we are using up.  It actually feels good to be going through the food in the freezer.  I'm not sure what I was saving it all for - a virus outbreak, I guess.  We haven't been to the store in over 10 days now so we're starting to get a new grocery list together which means I'm figuring out menus.  I ordered from Instacart twice and they delivered to our front porch and Bruce has been once to the grocery store during the senior hour which they have from 7:00am - 8:00 am.  There aren't that many people in the store at that time which is nice.  But things change constantly with this outbreak.
