Basil Red Curry Salmon

This is one of the best salmon recipes I've cooked in awhile.  I have a lot of salmon recipes on this blog but I think this is one of my favorites so far from   Hannah Freese, RD .   We actually had this recipe twice because I had so much of the sauce leftover so we saved it and then had it again with salmon a few days later.  And we still did not get tired of it.  It's the kind of recipe that you'll lick your plate to make sure you get all the sauce.  It is made from this Thai red curry paste so the recipe is very simple when you use this pre-made curry paste.                          I get it at Target, believe it or not.  I started doing online shopping at Target for a few items during "year one" of the pandemic.  I love shopping this way because all you do is walk into the store, go to the pick-up counter, show your I.D. and your bag is handed to you.  It is so easy.  N...

Thai Red Lentil & Spinach Curry

We had this for dinner last night after three days of rain so we needed a dinner to spice things up.  This recipe hit the spot.  It uses Thai Red Curry Paste that makes the recipe super easy, yet super tasty.    I use this same curry paste in  Thai Chicken Green Curry , a recipe that I make a lot.  It adds such a great flavor with minimal work so I highly recommend using it.  I got this recipe from  Hannah Freese, RD  so you know that the paste has all natural ingredients because her diet does not include any processed foods.  I can definitely feel the difference eating this way.  I actually put away all the Halloween decorations and immediately got out the Thanksgiving decorations in just 2 days. Thai Chicken Green Curry

Restaurants are open here at 50% capacity now but I can't even remember the last time I was inside a restaurant and we don't plan on going inside one anytime soon.  The coronavirus variant B.1.1.7 is in our county now so despite being vaccinated, they are still telling us to wear masks and social distance until they know if we could carry the variant and spread it to non-vaccinated people.  Sachiyo is the only non-vaccinated adult we are around now since Nick and Lauren have both been vaccinated for their jobs so we are still being cautious and following the guidelines of health experts.  We've been able to get our Asian fusion-fix without going to restaurants by making recipes like this one.   I've made this multiple times and love it every time and it's so easy.  It's easy because it uses bottled green curry paste that adds instant flavor.  I use this brand from Thai Kitchen that is compliant with my new eating plan from  Hannah Freese, RD .   ...

Coconut Chickpea Curry

  Today, the fall weather really kicked in and it was a curry-kind-of-a-day.  This is another recipe from  Hannah Freese, RD  that we had tonight and it really hit the spot.  I've been enjoying the walks around the neighborhood that I take with my neighbor and I always end up taking many photos.   We always walk down this street and the sun was just starting to set the other day and it was gorgeous outside.  It was funny, too, because we were just talking about how neither one of us have the urge to travel or even go anywhere during this pandemic and how lucky we are that we aren't restless like so many folks.  Then she says, "Well, here's why!  Just take a look...we have all this right before us.  Seriously, why would you want to leave this? !"   We had to stop and laugh at ourselves for the timing of our conversation.  Of course, not everybody has gorgeous views like this and we both do feel fortunate to live where we do. ...

Shrimp and Vegetable Fried Rice

Our 35th day of self-quarantine .  We are eagerly awaiting the governors press conference today because he's suppose to talk about outdoor recreation activities and maybe lift restrictions on golf, fishing and hunting.  Bruce is eager to hear this one because he wants to be able to play golf again.  It seems to me that golf would be safe enough.  Our state is taking things really slowly so we won't have a second wave hit us of the coronavirus .  Now, every time the governor comes on the air, we're eager to hear what will be the next thing to open.  Last week, he allowed construction workers to go back to work. (I'm so glad our remodel is all done.  We started our remodel one year ago exactly.)  Two neighborhood farmer's markets opened last week, too, with lots of restrictions but at least that's something.  Our neighborhood farmer's market hasn't started back up yet, but when it does, it will be interesting to see how it's changed.  T...

Thai Chicken Lettuce Cups

I haven't posted a recipe in long time because our kitchen/house is being remodeled but I wanted to post this recipe that I got from my neighbor after she invited us over for a neighborhood gathering.  The gathering was a memorial service for her dog, Emma, who recently pasted away. I wrote about my neighbor, Karen, here  a couple of years ago when she hosted a "Welcome to the Neighborhood" party at her house.  This year's party was on a slightly sadder note with the passing of her pup but she still put on a wonderful and welcoming event for us neighbors.  After we all arrived, we had a little ceremony for Emma where her ashes were buried and the above plaque was placed in her memory.  Karen told little stories about Emma while Alexa played Scottish bagpipe music.  It was so touching it was hard not to cry!  Then we went back into the house and enjoyed all the wonderful food that Karen had prepared for us.  She always prepares ...
