Tacos with Cabbage Slaw

You will never want to eat regular tacos after you try this recipe. We perfected our corn tortillas  and now we've perfected the fixin's for inside of the tacos. This recipe doesn't include the usual cheese or lettuce that is normally put in tacos. Instead, we made a cabbage slaw with a beef mixture and a little guacamole. I got the recipe from Cooking Light which always has very good recipes. I'm pretty sure that we will always make our tacos like this from now on. To keep it compliant with my Plant Paradox diet, I used my grain-free tortillas that I've found from Siete Foods.  These tortillas are perfectly acceptable if you are gluten-free or avoiding grains like I am. I am buying "regular" food for Bruce, mainly because my "special" foods are a lot more expensive and Bruce doesn't really care. Last night, I was in the mood for a healthy dinner so decided to experiment with a recipe I found from a blog called Creative in My Kitchen . Lauren and Ari brought us French cookies back from their trip to Paris and I basically inhaled them. They were so good! We were cat-sitting their two cats while they were gone. Fish Friday

Happy Friday, everybody.  It's Lent and how many of you are eating fish on Friday? I grew up eating fish on Friday so it sort of sticks with you this time of year. I've been following Cooking Light where your meal suggestions pop-up everyday in your email, complete with recipes. You can switch around meals for different days, save your favorites, etc. I really like the site. Of course, I'm not losing weight, which is the whole point of it (I'd certainly love to lose weight...it's my on-going saga) but I love the recipes. And I love not trying to figure out what to cook for dinner everyday. (They also give you breakfast and lunch meals, as well) I'm not losing weight because I have too many "off" days. Fisherman's Chowder

It's Ash Wednesday so it's time to start the fish season once again.  Being catholic means you eat a lot of fish.  We all love fish in our family, so for me, Lent is just an excuse to eat more fish.  Yesterday, I ate an oyster poorboy sandwich in the cafeteria at work (I think it was for a Mardi Gras theme) but those oysters were so delicious.  I popped one of those fried oysters in my mouth and immediately tasted that burst of ocean.  I forget how much I miss that ocean-tasting sensation since I now live in a land-locked state.  Being from Seattle, I guess the salty, seafood air never really gets out of your system.   So, I'm starting this Lent season with a family favorite fish chowder.  It's super easy to make and full of flavor.   Makes 4 servings 2 yellow onions, diced 2 Tbsp. olive oil 3 large carrots, peeled and diced 2 potatoes, diced (I like Yukon gold or peeled Russets) 2 st...

Crunchy Oven-Fried Fish

This recipe was published September 1, 2008 from Cook's Illustrated - the place where I get a lot of my information and tips.  If you feel like fish and chips, make this recipe because the crust is so delicious, you won't need the "chips".  And it's baked, not deep, fat fried.  You'll just want to pick off the crust and eat it alone. To prevent overcooking, buy fish fillets at least 1 inch thick.   I think I found some fish that fits the bill.  This is a nice piece of cod from our freezer full of frozen fish from Bruce's fishing trip to Canada. The bread crumbs can be made up to 3 days in advance, cooled, and stored at room temperature in an airtight container.
