Sweet Potato & Ginger Chicken Nuggets

Tonight, I made another  Hannah Freese, RD  recipe and it was so good that I'm immediately posting it.  I think it might be more of an appetizer-type recipe but we ate them for dinner with a salad.  There was no dipping sauce recipe with these chicken nuggets but you could use soy sauce or a chili sauce like we used, as shown below.  The sweet potatoes in this recipe gives them a sweetness that makes them go down very easy because they are so good.   I ended up using white-fleshed sweet potatoes but if you used orange-flesh sweet potatoes then they would be orange colored.  I would like that color, especially for Halloween so I'm putting a Halloween label on this recipe. What a perfect Halloween party appetizer these would be.  I could go into the whole discussion about the difference between sweet potatoes and yams but there are so many different kind of each. Their names are used interchangeably and there are white- and orange-flesh types of bot...

Pumpkin Snickerdoodles

Fall is in full swing around here.  Yesterday, I made my  Pumpkin Chili  and then decided to make theses new cookies that were in the Seattle Times food section.  They just sounded so fall .  If it has pumpkin in it, it has to be fall.  I don't have a snickerdoodle cookie recipe on my blog but they are one of my favorite cookies so now I'm finally giving them some attention. This recipe is from  Hey Danie Bakes  blog.  They are not really a "pumpkin" cookie, but more snickerdoodle, which I like. The pumpkin flavor is very subtle.  I like putting pumpkin in recipes whether you taste it or not because it has so much nutrition in it; beta-carotene that converts to vitamin A which can be hard to get in your diet; it's a good fiber source; potassium and magnesium; and it has anti-inflammatory properties like antioxidents.  Theses cookies really smell up the house while you're baking them, too, because of the cinnamon which is perfect on...

Halloween Jack-O-Lantern Oranges

Happy Halloween!  After a pandemic Halloween last year, I hope you were able to make up for it this year.  We did!  Our Halloween was such a whirlwind of excitement because the grandkids are at a perfect age of 3 and 5 and are starting to get the drift of what this is all about.   We actually "practiced" Halloween before the big day so as not to overwhelm them. We got out the candy and started practicing "trick-or-treating" so they understood what it's all about.  I would hide behind a door, like in the bathroom or a closet, and they would come up and knock.  Then I would open the door and they would say "trick-or-treat!" and I'd give them some candy to put in their bags.  Or I would let them take candy and put it in their bags.  They LOVED playing that game and I ended up hiding behind every door in the house.  We've answered the door on Halloween before when little kids just stand there and don't know what to do while the parents are stan...

Pairing Cheese and Halloween Candy for the Ultimate Party Platter

This cheese and Halloween candy appetizer tray was not only fun to make but it was also a big hit during our Halloween festivities yesterday.  The grandkids were jumping up and down with joy when they saw this Halloween "snack" I had prepared for them.  I saw this article on  Food52  where they paired cheese with popular Halloween candy which I thought was a very clever idea and it makes for a very festive food tray.  Plus, there is something for everyone; sweet or savory, traditional or unusual, healthy or not, plus it was very colorful for the season.   You can also add your own favorites.  I added some pistachios and wheat thin crackers since I knew the grandson would go straight for the cream cheese and wheat thins, which he did.  The cream cheese was soon annihilated.  The Food52 article also included blue cheese and Twix, neither which I like that much so I left that pairing out.  There is a lot of room to customize this party tray...
