Pumpkin Snickerdoodles

Fall is in full swing around here.  Yesterday, I made my  Pumpkin Chili  and then decided to make theses new cookies that were in the Seattle Times food section.  They just sounded so fall .  If it has pumpkin in it, it has to be fall.  I don't have a snickerdoodle cookie recipe on my blog but they are one of my favorite cookies so now I'm finally giving them some attention. This recipe is from  Hey Danie Bakes  blog.  They are not really a "pumpkin" cookie, but more snickerdoodle, which I like. The pumpkin flavor is very subtle.  I like putting pumpkin in recipes whether you taste it or not because it has so much nutrition in it; beta-carotene that converts to vitamin A which can be hard to get in your diet; it's a good fiber source; potassium and magnesium; and it has anti-inflammatory properties like antioxidents.  Theses cookies really smell up the house while you're baking them, too, because of the cinnamon which is perfect on a rainy day.  Usually, this

Tex-Mex Casserole

I have the perfect dish for your next tailgate party or fall brunch that you may be planning.  Or maybe you just want a nice, basic fall-ish dinner this week.  I loved this recipe so much I gave a serving to my neighbor, Ginny, and she loved it, too.  It's a perfect fall dish that I made from  Hannah Freese, RD .  We are still having a beautiful fall around here but the rain is suppose to start in two days and then we all go into hibernation... Steak Bites with Tarragon Sauce

Here is a nice flare to your favorite steak only with a Fall twist to it.  This recipe reminds me of  beef stroganoff , one of my favorite dinners except this is from  Hannah Freese, RD  so there are no "white" carbs. added.  You can still add your own noodles, potatoes, rice or whatever you'd like.  Bruce had a baked potato with his and I had a green salad so it made for a wonderful dinner.  We are still having lovely fall weather and it's predicted to hit 80 degrees this weekend again.  Amazing.  We are thrilled about it because the Seattle Mariners are in the baseball post season so we still have games to go to.  Yesterday, we had rehearsal at the ballpark for tomorrow's game because we will be holding up the flag for the national anthem.  They selected some season ticket holders to participate and we eagerly accepted!   We beat the Toronto Blue Jays in the Wild Card series which was the best out of three games and we immediately won the first two games in Toro

Fall is in full swing around here including our baseball team going to the post season (gotta love October baseball...Brrrr!)  thus the baseball pumpkin in my photo that my friend brought over.  She and I went to the game Friday night and it just so happened that we won with a walk-off home run in the bottom of the 9th inning with 2 outs by a pinch hitter to secure our place in the playoffs - the first time that has ever happened in Major League history!   We could not believe what we were seeing.  The stadium immediately put up the big blue 'W" for all to see.  It was so exciting. We knew the Mariners could clinch a Wild Card spot this week but we didn't know what game it would actually happen.  They kept announcing the "magic number" everyday which means how many games they needed to win to secure a spot in the Wild Card.  So, we had plans to go to four games this week so we could be there for the celebration.  I couldn't believe it happened Friday night wi
