Kona Mai Tai Recipe

I realized last weekend when we had Bruce's Mai Tai recipe that I've never posted it on my blog.  After 5 years of blogging, I have almost all my favorite recipes posted.  This is by far the best Mai Tai recipe you'll ever need.  It is from a bartender at one our favorite Hawaiian hangouts back in the 80's called Tom Bombadil, a pizza joint in Kailua-Kona, Hawaii.  Their Mai Tai's were killer!  Over the years, someone in Bruce's family got the recipe.  His family went to Kailua-Kona regularly because his parents had a condo there.  His parents finally sold it 2005 after many decades of enjoying this spot in paradise. Tom Bombadil was replaced with another restaurant long ago but their Mai Tai recipe lives on.  You need a lot of ingredients for this recipe. It's like a special occasion drink and takes some thought to make one. Thank goodness you can only drink one of these since they have 5 different types of alcohol in them.  Y...

Salmon Barbecue

Last weekend, we had an end-of-the-summer big barbecue bash.  Bruce brought back a freezer full of fish after going to the same fishing spot I wrote about in my post in 2012  Salmon Barbecue   called the Outpost in British Columbia on Queen Charolette Island by  the West Coast Fishing Club .   He brought home a total of 4 King salmon, 4 Coho salmon, 35 pounds of halibut and 10 pounds of red snapper (you can see why they are called red snapper...) So, our end-of-the-summer barbecue was again, featuring our favorite of all foods, King salmon. We invited 30 of our friends over for a fish feast since good food is meant to be shared.  Everybody brought a side dish to contribute to the feast and we had so much delicious food like these salads from peoples' gardens, such bounty! I made my cheesy potatoes and  cheddar jalapeño and chive biscuits  that go so well with salmon. We also had some awesome desserts like thi...

Super Bowl Party 2013

Our Super Bowl party was super fun this year.   We made the party a New Orleans theme since the game was being played in the Super Dome in New Orleans. And since we were recently just there in January , we stocked up on Southern cuisine items to bring home such as the Hurricane and Cyclone drinks which are very popular in New Orleans. They were a big hit and went down very easy. Everyone brought incredible Southern food like mustard greens and polenta, shrimp and beans/rice, okra, black-eyed peas , gumbo, which was gumbo from a mix we brought back from New Orleans. Our main entree was baked ham which we always prepare for our Super Bowl party but instead of our usual au gratin potatoes that go with ham, this year we had cheese grits which are excellent with ham. We had the usual football food, too, to keep with a football theme. I had to throw a few vegetables into the mix but after everyone added their di...
