Copycat Starbucks Pumpkin Spice Latte

I LOVE pumpkin spice lattes from Starbucks.  I've had two so far this fall which is probably a record low for me this time of year.  I'm trying to control myself by following an anti-inflammatory diet for my arthritis which means omitting sugar and pumpkin spice lattes are loaded with sugar.  Starbucks website does not list how much sugar is in them but I know it's a lot.  And there isn't actually any pumpkin in them, either.  It's just syrup which we bought when we made pumpkin spice lattes with our espresso machine in Idaho.  The pumpkin spice syrup = pure sugar.  Well, I've got the solution to the whole sugar problem now.  I've discovered multiple blogs from people following the  Plant Paradox  diet and one had this recipe.  It's a blog called  Lectin Free Foodie  and she has this copycat pumpkin spice latte recipe that tastes just like it.  I omitted the whipped cream on top for calorie reasons (which would have made for a better photo) but it

Tacos with Cabbage Slaw

You will never want to eat regular tacos after you try this recipe. We perfected our corn tortillas  and now we've perfected the fixin's for inside of the tacos. This recipe doesn't include the usual cheese or lettuce that is normally put in tacos. Instead, we made a cabbage slaw with a beef mixture and a little guacamole. I got the recipe from Cooking Light which always has very good recipes. I'm pretty sure that we will always make our tacos like this from now on. To keep it compliant with my Plant Paradox diet, I used my grain-free tortillas that I've found from Siete Foods.  These tortillas are perfectly acceptable if you are gluten-free or avoiding grains like I am. I am buying "regular" food for Bruce, mainly because my "special" foods are a lot more expensive and Bruce doesn't really care. What is the best way to start off the beginning to long, dark days ahead now that summer is over?  How about celebrating at a Light Festival?  That's what Bruce and I did last night and we loved it.  We attended the United States' first international video projection mapping competition that was held here in Seattle at South Lake Union (SLU).  And it was awesome . What is video projection mapping, you ask?  Good question.  Apparently, it is very popular in Europe.  You need interesting architecture to make it work and then you need a big space in front of the big piece of architecture to view it.   Europe has both with all their ample walking space all over the place and all that amazing architecture.  Fortunately, we also have a place like that here at MOHAI's (Museum of History and Industry) with it's 5,000-square-foot facade and plentiful grassy standing space in front of it.  I've written about SLU in 2015 when we celebrated  Lauren

Spinach Stuffed Cod

Last night, I was in the mood for a healthy dinner so decided to experiment with a recipe I found from a blog called Creative in My Kitchen . Lauren and Ari brought us French cookies back from their trip to Paris and I basically inhaled them. They were so good! We were cat-sitting their two cats while they were gone. I was experimenting with this recipe which originally called for chicken breast but I thought it sounded good to substitute fish instead since I'm always looking for good fish recipes. We all thought it was totally delicious. When I went to the grocery store, they had Icelandic cod on sale so I bought about 2 pounds of that. Chicken Soup with Lemon and Ginger

It is soup season now and tonight that's what we had for dinner. It actually snowed in the mountains for the first time today. Brrrrrrrr!  But this soup will warm you right up.  I really like the flavors in this soup because it has lemon and ginger in it giving it an Asian flare so it's not your usual chicken soup.  It also has bok choy and mushrooms in it, two of my favorites.  Bok Choy is often called Chinese cabbage so it's in a lot of Asian dishes and I love it.     I randomly bought this bok choy when I went to the Pike Place Market recently.  It was a nice day, no cruise ships in port, tourist season is over and it's a perfect time for a local like me to enjoy our Market.  I actually went to buy clams for dinner but ended up with 3 bags of food before I was done.  I bought some of the  "OH MY GOD" Flavor King plums that were as sweet as sugar.
