Deviled Easter Egg Chicks

I made these for Easter with my grandkids in mind. Can you tell? They are in Spain but I am still thinking of things to make that I think they would love and when I sent them a photo of these, they loved them! I said I would post these on my blog so they could make them someday. I saw these on Pinterest and since there were only four of us here for Easter this year, I had lots of time to experiment with some creative options for Easter. The recipe was for 12 eggs but I messed up on some so ended up with eight instead which was still enough for the four of us.  I plan to include a few tips to help these turn out easier because they were actually harder to make than they look.   Makes 12 deviled egg chicks 12 large eggs, hard boiled and peeled 1/3 cup mayonnaise 1-1/2 tsp dijon mustard, or to taste 1/4 tsp garlic powder 1/8 tsp salt, or to taste 1 small carrot, peeled and sliced into thin carrot rings 6 black olives 1.  Cook hard boiled eggs.  Follow these inst...

Best Chex Party Mix

You are probably wondering why I am posting a recipe for Chex Party Mix.  Anybody can get the recipe off the box of any Chex cereal, right?  That' s what we did for years.  I use to make this during Thanksgiving and Christmas holidays when the kids were little and everyone loved it.  But that was before you could buy it pre-made in a bag in all stores like a bag of potato chips. When Bruce was shopping at Costco last month,  he said he almost grabbed a bag of Chex Party Mix for our Thanksgiving guests.  But then when he was in the cereal aisle,  he saw you could buy all three Chex cereals together (he always buys his Cheerios and Grapenuts at Costco) and decided it would be fun to make it homemade again.  So, he came home with the three Chex cereals and made it from scratch. Stuffed Dessert Dates

This is a simple dessert that packs a lot of punch for such little bite-size morsels.  We had these as one of the many dessert options in Washington D.C. where we visited last week. My sister, Jolene, lives there with her husband who are wonderful hosts when visiting D.C.  It turns out that Nick was in D.C.  for a work conference and then five other members of my family were there visiting for various reasons...so we had to go and join all the  fun. Sweet Potato & Ginger Chicken Nuggets

Tonight, I made another  Hannah Freese, RD  recipe and it was so good that I'm immediately posting it.  I think it might be more of an appetizer-type recipe but we ate them for dinner with a salad.  There was no dipping sauce recipe with these chicken nuggets but you could use soy sauce or a chili sauce like we used, as shown below.  The sweet potatoes in this recipe gives them a sweetness that makes them go down very easy because they are so good.   I ended up using white-fleshed sweet potatoes but if you used orange-flesh sweet potatoes then they would be orange colored.  I would like that color, especially for Halloween so I'm putting a Halloween label on this recipe. What a perfect Halloween party appetizer these would be.  I could go into the whole discussion about the difference between sweet potatoes and yams but there are so many different kind of each. Ham and Cheese Sliders

I have a perfect football playoff recipe to share since it's getting down to the wire for the Super Bowl.  You could easily serve these for a super bowl party or for any of the playoff games.  I made them for our Seahawks game when they clinched the playoffs on New Year's Day .  We had a little football party at our house on that day and then ten people came over for dinner.  It was a fun way to start our New Year.    Unfortunately, the Seahawks lost their first playoff game but it was exciting while it lasted.  As I write this, we are vacationing in Hawaii recovering from a busy holiday season.  And it's a great way to recover.  Every night is a gorgeous sunset so we always plan where we want to be each evening to watch it.  We are on the Big Island of Hawaii on the Kona coast which is where we like to come in Hawaii.  This year we made a family vacation out of it since Lauren, Nick, Sachiyo and the grandkids were all able to ...
