Greek-Style Shrimp Skillet with Tomatoes, Spinach and Feta

I've made this recipe twice already this month (and there's only been 3 days in May...!) so I thought I better post it. I got it from the Seattle Times last week and decided to try it out and I'm glad I did. It was so good that I invited my sister and her husband over for dinner and made it again the next day.  It's a perfect dish to have with guests over because it will totally impress them and it did.  The funny thing is that my sister saw the recipe in the newspaper, too, so she was delighted to come over and try it out.  This recipe is from a cookbook called The Complete Book of Greek Cooking and was originally called Shrimp Scorpio from the Recipe Club of Saint Paul's Greek Orthodox Cathedral. The book, published in 1990 and still available, is full of dozens of homestyle Greek recipes. This recipe is brimming with nourishing ingredients, too, like spinach and has all at the Mediterranean flavors we love. It really is a true winner. I am slowly getting b...

Chocolate Cheesecake with Chocolate Ganache and Raspberries

Last Friday,  I hosted a family gathering at our house to celebrate my nephew getting married so there were lots of relatives in town for the occasion.  I planned a menu of Cornish game hens (that I posted here ) and it was a potluck, buffet-style dinner.  I was very happy that the children even enjoyed it which can sometimes be a challenge.  I've learned from hosting meals that if the children are happy, the parents are even happier. For whatever reason, I had a hard time deciding what to serve for dessert and kept going back and forth with ideas.  I ended up deciding on chocolate cheesecake, but then I thought the kids might not like it so I bought some ice cream, just in case. When it came time for dessert, I offered the kids chocolate cheesecake and/or Cookies and Cream ice cream.  They wanted both! Well, I scored on that one. I wasn't planning on serving cheesecake with ice cream but when the adults saw the kids walking away wi...

A Cultural Experience

Yesterday, my friend, Marge, and I decided to spend the day celebrating our birthdays by taking a trip out to Tillicum Village on Blake Island. We have been friends since second grade so that is 50+ years of friendship; yes, we go way back. We've had so many adventures together, I can't even begin to list them. When we were single gals, we were roommates three different times. We've both moved away from Seattle multiple times and we've both moved back. We are the same age and we've both been married to our husbands for 35 years. I guess you could say we have a lot in common. Marge's birthday is in May and  I just had my   birthday  so it's fun to find the time when we can celebrate together by doing something special.  We've had such beautiful weather lately that we decided a boat ride out to Blake Island would be perfect.  Blake Island is a state park that has a Native American Cultural center called Tillicum Village because it is the leg...
