Brothy Corn and Salmon Chowder

I have another summer garden recipe but it's not zucchini this time. We also have an abundance of tomatoes.  Depending on what you have in your garden, this recipe also has corn, pototoes, basil, chives, and dill.  But even if you don't have a garden, this is a good summer soup anyway.  The corn-on-the-cob this summer has been amazingly sweet.  When I saw this recipe, the first thing I thought of was "Oh boy! I can buy more corn!"  The other thing I thought of was how I can use some coho salmon that Lauren brought home from Alaska.  She returned last week after a visit there for the first time to spend some time with her boyfriend's family who is from Alaska.  And they did A LOT of fishing.    Her boyfriend's parents have two boats; a working boat and a recreational boat and they went out in both multiple times. Basil Red Curry Salmon

This is one of the best salmon recipes I've cooked in awhile.  I have a lot of salmon recipes on this blog but I think this is one of my favorites so far from   Hannah Freese, RD .   We actually had this recipe twice because I had so much of the sauce leftover so we saved it and then had it again with salmon a few days later.  And we still did not get tired of it.  It's the kind of recipe that you'll lick your plate to make sure you get all the sauce.  It is made from this Thai red curry paste so the recipe is very simple when you use this pre-made curry paste.                          I get it at Target, believe it or not.  I started doing online shopping at Target for a few items during "year one" of the pandemic.  I love shopping this way because all you do is walk into the store, go to the pick-up counter, show your I.D. and your bag is handed to you.  It is so easy.  N...

Shiitake Citrus Salmon

We are back on the healthy eating wagon after our Valentine's celebration last weekend so we made this wonderful salmon dish this week. I would say this recipe is good enough for a special occasion or for having guests over for dinner  (When social distancing isn't a thing anymore.)  We had to postpone our Valentine's dinner on Sunday because we got 9" of snow over the weekend and all driving shuts down around here because of hills so we shoveled snow instead.   It was a nice dry snow and we even had drifts around our house as if we were in the midwest or something!   We lived in Iowa for three years so we know what snow drifts are.   Just like I mentioned previously, I made my  Wine Braised Shortribs  for Valentine's Day and everyone loved them.  The grandkids just slurped down those tasty, juicy noodles so fast and kept asking for more.  I set a lovely Valentine's dinner table for everyone's holiday enjoyment and the grandkids got to decor...

Walnut Crusted Salmon

You can probably guess we are back on the healthy eating wagon after a busy holiday of indulgence.  Despite not really entertaining that much, I still did all my usual Christmas decorating and baking this year.  In fact, I had time to do more!  We quarantined for 10 days before Christmas Eve so we could get together with my sister and her husband who did the same.  It's really nice to have a "normal" evening once in awhile like we did for  Thanksgiving .  I try to make it special with decorations and lovely table settings since we don't get to do this type of thing very often anymore.  And with all my extra time, why not?   The next day on Christmas is when our kids and grandkids came over for our first Christmas with Nick's family since they moved back from Japan after 7 years.  We had a quick turn-around time to put the board extensions in the table so we could all spread out and re-set the place settings.         ...

Salmon with Cabbage and Kale

This recipe doesn't look like much but it's super easy to make, super healthy to eat and amazingly delicious.  It's the special dill sauce that does it, I think.  You bake the salmon on top of the cabbage and kale so all the juices cook into the vegetables which adds such great flavor and softens the texture.  I've never been a big kale fan but since I started  Hannah Freese, RD  diet, I've been surprisingly eating a lot of kale and don't really mind it.  I've been buying Trader Joe's packaged kale that will last 2-3 meals and then I don't have to mess with cleaning it.  Unlike lettuce, I don't think packaged kale tastes any different that fresh kale but I can really taste a difference with lettuce so I always buy fresh lettuce.  The cabbage in this recipe is a lot like my  roast chicken with cabbage  recipe that is so simple, yet so tasty.  This salmon recipe is good enough to serve to guests or for a special occasion, it's that go...

Salmon, Spinach and Avocado Salad

It's been too hot to cook around here so last night I  made this easy salad using a wild sockeye salmon fillet that we got from a "buy one, get one free" offer at our local grocery store.   There are some variations to this salad so you can add or subtract items depending on your preferences that I'll add to the recipe. I'm still experimenting with the low lectin diet that I talked about in my last post and this recipe is low  lectin.  I am reading the bo ok  The Plant Paradox   that basically goes beyond a gluten-free diet and eliminates foods with lectins which the author claims is the cause of a lot of health problems.  I'm realizing that The Plant Paradox book is a diet itself because the author outlines other dietary restrictions besides low lectin when following his regimen like limiting sugar and only 4 ounces of meat daily.  So, the P.P. diet (Plant Paradox diet) is actually more than a low lectin diet. Roasted Salmon with Thyme and Honey-Mustard Glaze

Our latest dinner from   Cooking Light was this salmon recipe that I made tonight along with some Swiss chard and rice. The mustard sauce went really well with the chard and rice and the recipe was super simple to make. We eat salmon a lot so it's always nice to find a fast, simple, yet flavorful way of preparing it to change things up a bit. The salmon was on sale this week at our local grocery store as a "buy one and get one free" offer so I knew we would have salmon this week, for sure.
