Deviled Easter Egg Chicks

I made these for Easter with my grandkids in mind. Can you tell? They are in Spain but I am still thinking of things to make that I think they would love and when I sent them a photo of these, they loved them! I said I would post these on my blog so they could make them someday. I saw these on Pinterest and since there were only four of us here for Easter this year, I had lots of time to experiment with some creative options for Easter. Easter Bread Wreaths

This year, we all got our own little Easter bread wreath during our Easter dinner and it looked quite festive.   There were only four of us for dinner so I made my traditional  Easter Bread  that is a family favorite but I turned them into four Easter wreaths.  Bruce walked into the house and immediately said, "Wow, it smells like Easter!"   Nick and Lauren are together in Spain celebrating Easter - Spanish style.  The Spanish really get into it, as do so many European countries, not surprisingly since over half the population is catholic.                        Since our kids are living adventurously having a great time abroad without us....we invited my sister and her husband over for Easter dinner. An Easter Feast

We had our first (extended) family gathering this Easter for the first time since February 2020 at my nephews house. Our last gathering was right before the pandemic when another nephew got married and we had a big family dinner at our house to celebrate that I wrote about here .  It's weird to think it's been over two years now.  Of course, we get together with Lauren, Nick and family almost every weekend for a family dinner so I am lucky to be able to see them often.  But a big group like this one is a very special occasion.  We were mostly excited for the grandkids to be able to play with my nephew's son who is close to their same age and they also have a much bigger yard than we do for an Easter egg hunt. So, it was perfect.  Because of the pandemic, all our holidays have been with my immediate family only, with Nick and Lauren but it's so nice to see the grandkids be able to play with other kids for a change and we've been yearning to have this experience ...

Crispy Prosciutto-Wrapped Asparagus

Tomorrow is Mother's Day and I get to have a restful day while, at the same time, I get to eat good food.  What could be better than that?  Bruce got a salmon that we plan to barbecue and since Nick has been requesting teriyaki salmon, we'll marinate this salmon with my family favorite  teriyaki sauce .  I plan to make my last posted recipe  Persian Chopped Salad  because I didn't get enough of it last time.  Mother's Day is a lot like Easter when it comes to the menu.   So, Bruce suggested we have another popular dish,  Orzo with Mushrooms and Walnuts , that we haven't had in a long time.  The final item we're going to make is this Crispy Prosciutto-Wrapped Asparagus that we had on Easter.  We got a free bunch of asparagus at our local grocery store since this is asparagus season and the prosciutto turns it into a special occasion dish like Mother's Day.  I think for dessert, we'll do strawberry short cake which is something s...

Quinoa Chickpea Tabbouleh

This salad was so good for our Easter dinner that today I plan to make another batch just so I can keep on eating it.  It's a perfect Springtime dish because it's so fresh with the parsley and mint and then the lemon dressing is so refreshing.  Everyone loved this salad yesterday.  I made Ina Garten's  Herb-Roasted Lamb  for the main dish that was amazing to say the least, especially the crusty coating on it made with butter, rosemary, and garlic.  You can't go wrong with that combination, especially when the lamb was cooked perfectly.   I made four side dishes to go along with the lamb including my family's favorite "cheesy potatoes" that is basically a thick cheese sauce with cooked potatoes added to it.  I plan to post the other three side dishes because they were all so delicious and I will definitely make them again.  We had an incredible Easter dinner to say the least.  Lauren, Nick + family came over and the grandkids were thrille...
