Berry Spinach Salad with Spicy Maple Sunflower Seeds

If you want to enjoy the summer berries right now without the loaded calories of whipping cream and shortcake, here's a recipe for you.  We've had this salad twice this month and I'm not sure what I like most about it; the maple sunflower seeds or the oil/vinegar dressing with a hint of Dijon mustard and more maple syrup.  The combination of all of it put together is so good.  The nutrient-dense superfood of spinach and the berries loaded with antioxidants and phytoflavinoids are sure to boost your immune system during this era of coronavirus and we all need that right now.  I made this salad for Memorial Day, thus the red, white and blue theme. Blueberry Coffee Cake

The nice thing about your football team's playoff game starting at 10:00 a.m. is that you can eat breakfast while watching it.  Last week, the 10:00 a.m. game caused a major  dilemma  in our day.  Today, it was nice and relaxing except we lost the game so that's a bummer.  The good thing is that I can drown my sorrows with this most delicious blueberry coffee cake.  It somehow makes a fan feel a lot better after a loss.   I was going to make regular coffee cake this morning, but I had a large 18 ounce container of blueberries that have been on sale at all the grocery stores around here so blueberry coffee cake it is.  It turned out to be one of those recipes that make it hard not to have a second piece.  And, to make it more tempting, I just happened to have two containers of frosting from Great Harvest Bakery from the last cinnamon rolls we bought.  They always give us frosting "on the side" when we buy cinnamon rolls there. ...

Blueberry Lemonade

One of the beverages I served over Memorial Day weekend that everyone loved was this Blueberry Lemonade that I found on  white on rice couple blog .  This hit the spot on Saturday afternoon after our art therapy session that we opened our weekend with. We were asked a series of questions about our feelings of the upcoming weekend and we doodled our answers on colored paper and taped them on one large board so we could look at everyone's doodles.  Some answers entailed lots of circles and some answers resulted in jagged lines. This was "sisters weekend" and since we all live in different parts of the country, we don't have opportunities to get together very often so these gatherings are always special and meaningful to us. We also did an art therapy exercise where we drew our interpretation of our space for the weekend.
