Tacos with Cabbage Slaw

You will never want to eat regular tacos after you try this recipe. We perfected our corn tortillas  and now we've perfected the fixin's for inside of the tacos. This recipe doesn't include the usual cheese or lettuce that is normally put in tacos. Instead, we made a cabbage slaw with a beef mixture and a little guacamole. I got the recipe from Cooking Light which always has very good recipes. I'm pretty sure that we will always make our tacos like this from now on. To keep it compliant with my Plant Paradox diet, I used my grain-free tortillas that I've found from Siete Foods.  These tortillas are perfectly acceptable if you are gluten-free or avoiding grains like I am. I am buying "regular" food for Bruce, mainly because my "special" foods are a lot more expensive and Bruce doesn't really care. Shepherd's Pie

Here is a lightened up version of Shepherd's Pie from Weight Watcher's, another appropriate recipe after over-indulging during the holiday season. Lauren came over for dinner tonight and the three of us ate nearly the whole pan; the recipe says "Serves 6". Really?  I've already changed the original version of the Weight Watcher's version so I can't even tell you how many points this recipe is now.  With our cold weather, we want hardy meals yet we want to eat light. I guess if we eat twice as much as we suppose to then we're really not eating light. But this recipe was that good. It was hard to stop going back for more so that is why I'm posting this recipe. Sticking with the Mexican theme, by the time Halloween came along I was still craving Mexican food.  Why didn't we just go out for Mexican food, you ask?  That's too easy!  I must make it!  This recipe popped up on Facebook f rom  Get In My Belly   that has those speed videos showing a recipe being made really fast. It looked easy so why not? (They always look really easy when they speed through them in a video.)  I've never used those hard taco shells before - the ones that come in a box.  But they looked a lot easier to eat than authentic tacos and easy to make.  I thought it would be nice to have tacos that are instantaneously ready to eat and that aren't messy plus we can walk around and eat them while we're answering the door on Halloween.  We get a lot of trick-or-treaters at our house and we were ready. Homemade Spaghetti Sauce

With tomato season in full force, we are working hard to eat up our tomatoes.  I canned a few more quarts of tomatoes as we made a batch of  apple butter  last weekend. As you can see, some of the apple butter will be holiday gifts. Apple butter is such an old fashioned-type food so a lot of people are thrilled to get it.   Have you ever bought apple butter at the store?  Exactly.  Sometimes I'll just take some over to people's house when I visit with a loaf of Old Fashioned White bread  from  Great Harvest Bakery  which is the perfect match for our apple butter.  We couldn't let our canning season go by without making more apple butter.  I also couldn't let all these tomatoes go into quart jars without making some spaghetti sauce so last weekend we had spaghetti with homemade spaghetti sauce.  I love fall! Asian Meatballs with Peanut Sauce

I got a craving for Asian meatballs tonight so whipped up this recipe which turned out delicious.  Actually, the sauce really made them finger-licking good. If you want a good peanut sauce, this one is a winner.  We had these meatballs and sauce with brown rice, even though I know this is not Asian but brown rice is healthier, what can I say.   Makes 20 meatballs 1 pound ground turkey 1/2 cup plain bread crumbs 1/2 cup diced onion 1/2 cup diced red pepper 1/3 cup cilantro, chopped 1 egg 1/2 tsp. salt 1/8 to 1/4 tsp. cayenne pepper 1-1/2 tsp. grated ginger, divided 2 Tbsp. vegetable oil 1 cup light coconut milk 1/3 cup chunky peanut butter 1/2 cup chicken broth 2 Tbsp. soy sauce 1.  Combine ground turkey, bread crumbs, onion, red pepper, cilantro, egg, salt, cayenne and tsp. ginger in a large bowl I combined the ground turkey that I had  with some ground beef because the turkey came in a package of only 12 ounces so I added 4 o...

Chili

Tonight we had chili for dinner because of the frigid temperatures we've been having.  It has not been above freezing for about two weeks and this morning it was -2 degrees which is unheard of around here.  Bruce went skiing with a couple of buddies at our local ski area which is less than an hour away. It was beautiful weather up there, nearly 40 degrees.  We are in an "inversion" right now where the cold air is trapped under low pressure keeping it cold and frigid. But if you go up in elevation and above the valley we live in, it gets a lot warmer and nice!  So, that's what Bruce decided to do today.  I told him I would make chili and  corn bread  for dinner.
