Everything Bagel Cucumber Bites


Appetizers don't get much easier than this one.  I've always loved putting Trader's Joe's seasoning called Everything but the Bagel Sesame on things like my eggs for breakfast and now here is another idea you can use when guests come over.  

If you aren't familiar with this Trader Joe's product, it is a seasoning blend of sea salt, garlic, onion, sesame seeds, black sesame seeds and poppy seeds.  It makes everything taste like a bagel with everything on it. 


People love this appetizer which is not too filling but instead very refreshing because of the cool cucumber.  The seasoning adds just enough kick with the cream cheese to get a reaction "Ohhh, these are good!"  You almost forget that you're biting into a cucumber instead of a bagel.  I mean, who doesn't like a bagel with everything on it?  


I got this recipe from Hannah Freeze, RD, so you know these are low carb and good for you.   The seasoning gives these that salty, flavorful taste in your mouth so you don't even mind that these are cucumbers instead of crackers. Very deceiving, indeed.  We had friends over to our house last night and we served these along with some local Beecher's cheese and crackers - yes, we did have crackers so nobody missed out - along with some kalamata and castelvetrano olives.  For dinner, we made  Grilled Steak Skewers with Chimichurri , a green salad and Garlic Mushroom Quiona .  I also made my Peach Cobbler with whipped cream for dessert. 


It was fun serving the chimichurri on the 
side in a little dish with a spoon so each person could add more to their meat as they wanted. It was a warm, 80 degree day here in Seattle, perfect for spending the whole evening on the deck; appetizers, dinner, dessert, and then sitting around the fire pit admiring the view.  This is the best way to spend a summer evening.  


These little Everything Bagel Cucumber Bites were the big hit, though.  The whole month of August  is still ahead of us to get in more summertime barbecues with friends and family.  Be sure and add this recipe to your guest list and everyone will be guaranteed a good time.


whole English cucumber or cucumber type of your choice
1/2 package cream cheese
Everything Bagel seasoning

1.  Spread the cream cheese evenly over top of each cucumber slice.  Sprinkle with Everything Bagel seasoning.

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Last night, I was in the mood for a healthy dinner so decided to experiment with a recipe I found from a blog called Creative in My Kitchen .
