Bourbon Peach Basil Smash


Yesterday, we had a Labor Day barbecue at our house with Bruce's always delicious, fall-off-the-bone tender barbecued ribs.



Everyone else brought food to contribute to our barbecue including deviled eggs, delicious salads and I made an apple cobbler with ice cream for dessert. 


Summer is not over yet and we want to take full advantage of our still sunny weather and all the in-season produce available this time of year.  And the peaches are still going strong but not for much longer.  I wanted to use peaches in our Labor Day barbecue special cocktail this year so I came across this recipe by a company called Be-Mixed.  They make three kinds of mixed cocktail drinks that are sugar-free, zero calorie.  Their website has some incredible drink recipes so I needed to try this out.  


We still have lots of fresh basil, too, so a peach and basil recipe was perfect.  Everyone loved them.  I will admit, however, that I think the alcohol I used had a lot to do with it.  I used bourbon from a local distillery here called Heritage Distilling.  Bruce is actually doing work for them since they keep expanding, which is a good thing.  They are also a sponsor for the Seattle Mariners and they have a huge bar in the Terrance Club where we like to go.  Yesterday, I used their Brown Sugar Bourbon in this drink which is one of the reason I think everyone loved it so much.  


This is an excellent bourbon!  You can drink it very easily plain or on-the-rocks because it is flavored with brown sugar making it on the slightly sweet side.  It's almost like a dessert all by itself.  I suppose if you are a true bourbon drinker, this would not be for you but if you're like me and have a sweet tooth and are always on the lookout for unique and delicious cocktails, you would love this one. The mixer I used by Be-Mixed is called Ginger Lime which is one of three mixers they make. I think their bottles are beautifully designed, too.   


With the Ginger Lime, you can make Moscow Mules, along with an array of other unique drink recipes from their website like this one.  The Cucumber Mint is for Mojitos and the third is Margarita.  All of them are calorie-free.  I am excited to try other drinks with this product and reduce my sugar intake but yet, enjoy all my favorite cocktails. 


Makes 1 drink


1/2 ripe peach, diced

1 shot fresh lemon juice

4 basil leaves, plus extra for garnish

1/4 cup Be-Mixed Ginger Lime  (you can go up to 1/2 cup if you are not using a sweetened bourbon like I did)

1-1/2 oz. Bourbon (or use club soda for a mocktail)


1.  Muddle peach. lemon juice, and basil in an old-fashioned glass.

2.  Add Be-Mixed and bourbon.

3.  Add ice cubes and stir well.

4.  Garnish with basil.

Meatloaf by Mark Bittman

Once again, I turned on the television yesterday and saw that Mark Bittman was on the Today show and was making his version of  meatloaf .  This must be meatloaf season.  It was surprisingly similar to the  Pioneer Woman's version  who was also recently on.   I was a little surprised of his version because Mark Bittman is into healthy eating and has lost a lot of weight and improved his health by changing his diet which he writes about in his book,  Food Matters .  His meatloaf recipe also included bacon and cheese!  I must be doing something wrong.  The thing to remember, which he writes about in his book, is that you can eat healthy without going extreme or changing your whole life.    If you don't know who Mark Bittman is, he is a food writer and a four star chef with multiple cookbooks who loves to eat but changed his food philosophy to improve his health.  He tells his story in Food Matters and provides ...

Two-Bean Soup with Kale

This hearty vegetarian soup warms up chilly nights.  Use any type of canned beans you happen to have on hand and add chicken or Italian sausage for a heftier dish, if you prefer. Makes 4-6 servings 3 Tbsp. olive oil 1 cup chopped onion 1/2 cup chopped carrots 1/2 cup chopped celery 1/2 tsp. salt, divided 2 cloves garlic, minced 4 cups vegetable broth, divided 7 cups stemmed, chopped kale (about 1 bunch) 2 (15-ounce) cans cannellini beans, rinsed, drained and divided 1 (15-ounce) can black beans, rinsed and drained 1/2 tsp. freshly ground black pepper 1 Tbsp. red wine vinegar 1 Tbsp. fresh rosemary or 1 tsp. dried rosemary 1.  Heat a large Dutch oven over medium-high heat.  Add olive oil to pan; swirl to coat.  Add onion, carrot, and celery, and saute 6 minutes or until tender.  Stir in 1/4 tsp. salt and garlic; cook 1 minute.   2.  Stir in 3 cups vegetable broth and kale.  Bring to a boil; cover, reduce heat, and simme...
