Tonight, we had Kokanee salmon for dinner. Bruce brought 5 home from the office that he received from one of his co-workers because he had so many.
He had been fishing at Anderson Lake and he catches so many, like 25-30 at a time, that he'll just give them away. So, tonight we smoked them on the Traeger.
You may have heard of Kokanee before because there is also a beer by the same name from Canada. It's a Canadian lager. I'm not sure why I know that...but I think I knew of the beer before I knew of this freshwater salmon called Kokanee. This particular salmon never touches saltwater. It is the freshwater version or landlocked version of sockeye salmon. It doesn't have a strong salmon taste really, but it's still good. When we cook salmon, we put a little sliced onion on top and that's all because we love the plain salmon flavor. Now, these Kokanee salmon don't really have that same intense salmon flavor. So, for Kokanee, we will put a salmon rub on it and cook it on "smoke" for 1-1/2 hours. And it really tastes like smoked salmon! Delicious.
I think this will probably be our dinner tomorrow, too.

I know we shouldn't feed the animals from the table but the chickens are entertaining. Especially the chicks, who now almost look like grown chickens but not quite. And tomorrow we'll do it all over again...
