Crockpot Beef Stew


It really doesn't get any easier than this.  Throw a bunch of vegetables in the crockpot with some stew meat and you have beef stew!  That's what we did for dinner tonight.  Nothing better than to come home to a hot, hardy meal waiting for you after a long week of work. After a bowl of stew for dinner, I realized I didn't even put any seasoning in it!  But it was just so good with all the flavors of the vegetables and so sweet and juicy.  Here's what I put in it:


1 pound of stew meat - cut in bite-size pieces

6 carrots, peeled and cut into bite-size pieces
2 turnips, peeled and cut into bite-size pieces
1 parsnip, peeled and cut into bite-size pieces
1 rutabaga, peeled and cut into bite-size pieces
3 scrubbed Yukon gold potatoes and cut into bite-size pieces
1 large Walla Walla sweet onion, cut into bite-size pieces
1 can of diced tomatoes, I used a can of these:



8 ounces of broth, I like using these cute little boxes of broth:


1.  Put all ingredients in the crockpot and stir to mix well.




2. Turn on low and cook for 8-10 hours until you get home from work.

3. Spoon into bowls for a hardy meal. Serve with 
corn bread.





Makes for some good lunches during the weekend, too.

Meatloaf by Mark Bittman

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Waking Up in Vegas

We went to her 78th performance which was her second-to-last Las Vegas residency show entitled "Play".  That was perfect for us because we went to Vegas simply to play.  Her concert was a great finale for us because it was high energy and full of silliness, just the way Katy Perry is.  And we were feeling it after three nights in Las Vegas.
