Make 8 slices
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup sugar
4 tsp. baking powder
3/4 tsp. salt
1 cup yellow cornmeal
2 eggs
1 cup milk
1/4 cup oil
1. Whisk together all dry ingredients until well blended. In a separate bowl, mix together egg, milk and oil. Add dry ingredients to liquid and mix just until smooth. (Do not over beat)
2. Pour into greased 9x9x2-inch baking pan or I use a black, round iron skillet.
3. Bake in 425 degree oven for 20-25 minutes.
Delicious with butter and honey!
