Bruce’s Birthday at the Beach



Bruce’s birthday is always near Labor Day so this year we planned a family vacation at Seaside, Oregon  as a nice end-of-the-summer celebration.  The picture below was taken in the town next to Seaside, Cannon Beach, with the famous Haystack Rock that we always try to visit at low tide at least once while we’re there. 


We rented a vacation rental home that was a couple blocks from the beach so it was perfect.  It even had a nice hot tub.  Yippee!  We all love a hot tub. 


The grandkids love the beach and it was fun being with them and discovering all the wonders of this endless playground.  We did lots of kite flying, sand castle building, running with waves, sand dollar hunting and pretty much anything else you do at the beach. 

                     


                     

                     


                      

Every evening we would head out to watch the sunset, build a fire and roast marshmallows and make s’mores.  Isn't that what everyone does?  





My 6-year-old granddaughter and I both have ukuleles and are taking lessons so she played Happy Birthday to Bruce on her ukulele for his dinner celebration.  It was so cute and such a thrill for her.  We love to practice together but I think it sort of drives everyone else in the house a little crazy.  It was also fun to bring it out in the evenings so we could sing around the campfire.


The sunsets were amazing every night and we took a lot of sunset photos.  We had really good weather the whole time we were there so we were very lucky.  Weather on the coast can be tricky sometimes but it was wonderful last week.

                     

                 

                 

I bought a carrot cake for Bruce’s birthday which is his favorite cake and he barbecued fresh salmon that we bought at a fish market.  So, he had all his favorites plus lots of presents to open.  What a lucky guy!  

                   

Happy Birthday, Bruce!  One of the best birthdays yet.

Meatloaf by Mark Bittman

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Spinach Stuffed Cod

Last night, I was in the mood for a healthy dinner so decided to experiment with a recipe I found from a blog called Creative in My Kitchen . Lauren and Ari brought us French cookies back from their trip to Paris and I basically inhaled them. They were so good! We were cat-sitting their two cats while they were gone.
