Persian Chopped Salad

I made another really great salad this weekend when my family came over for dinner that is from  Heather Christo's blog .  She is a food blogger who I've followed for a long time who lived in Seattle.  They have since moved from the area but I still love reading her blog.  Her family has a lot of food allergies so her recipes are geared toward omitting common allergenic foods such as gluten, dairy, soy, eggs, etc.  It's really interesting to read her story  here  and she also has a lot of information about allergies or just food intolerances in general.  She also has a cookbook you can get here .  I've used a lot of her recipes on my blog, mostly in the "alcoholic beverage" section of my blog.  For whatever reason, Heather has A LOT of really good cocktail recipes and her photos are gorgeous.  Hey, the girl knows how to have a good time, is all I can say... Garlic Mushroom Quinoa

Here is another spring-like recipe that I've made a couple times lately, including for our Easter dinner.  It's an easy side dish that you can add to any meal and everyone will love it.                      It's a recipe from my  Hannah Freese, RD  collection that I've been following since September.  It makes life so much easier following her plan because I'm not thinking about if something is "healthy" or not.  Sure, I still make desserts occasionally for special occasions but for daily life, her plan is right on.  I feel so much better physically and I definitely have more energy now that our weather is getting nice.  I've pulled out my summer clothes and many are baggy on me now.  I'm not planning to shop for more, though, because next month I'm having my other knee replacement surgery, so I will be rehabilitating again for most of the summer.  I won't be going anywhere soon.  I've been training Bruce to make my favorite Freeze Meth

Quinoa Chickpea Tabbouleh

This salad was so good for our Easter dinner that today I plan to make another batch just so I can keep on eating it.  It's a perfect Springtime dish because it's so fresh with the parsley and mint and then the lemon dressing is so refreshing.  Everyone loved this salad yesterday.  I made Ina Garten's  Herb-Roasted Lamb  for the main dish that was amazing to say the least, especially the crusty coating on it made with butter, rosemary, and garlic.  You can't go wrong with that combination, especially when the lamb was cooked perfectly.   I made four side dishes to go along with the lamb including my family's favorite "cheesy potatoes" that is basically a thick cheese sauce with cooked potatoes added to it.  I plan to post the other three side dishes because they were all so delicious and I will definitely make them again.  We had an incredible Easter dinner to say the least.  Lauren, Nick + family came over and the grandkids were thrilled to have a Easter

Chocolate Cream Pie

                  This is a chocolate cream pie recipe I've made multiple times but I've never posted it until now.  This time I made it in little jars similar to my  coconut cream pie  that I made for Easter in 2013 and again in 2018. I also made this recipe for our post-Thanksgiving potluck when Bruce's sister was visiting in 2019.  We made a banana cream and chocolate cream pie and they were both incredible.  I think it's time I post this recipe.  This recipe is from Ina Garten's cookbook,  Cook Like a Pro minus the bananas that Ina adds to her's.  For whatever reason, pie seems to be the favorite dessert for Easter dessert and since chocolate is my granddaughter's favorite flavor, I told her I would make a chocolate one for Easter this year.  We already made chocolate cupcakes earlier in the week as a warm-up and she was quite thrilled with how they turned out.                          This will be our first Easter with the grandkids and we're reall
