Are you on a detoxing regimen since the New Year to rid yourself of all the sweets you ate over the holidays? Or maybe your New Year's resolution was to now eat healthy after over-indulging during the holidays. Or maybe you've already given up on your New Year's resolution. Well, I'm here to save the day! I made a dessert yesterday for my family that tasted very indulgent and delightful. And there were no complaints that there was zero added sugar in it. You would never know it. Even my 4-year old and 2-year old grandchildren loved this recipe. Maybe you have children you are trying to curb their sugar intake. Maybe you are an adult who is trying to curb your sugar intake. I love this recipe because it is for everybody. It's a SUPER easy recipe; so much so that my grandchildren made it and your children can make it, too.
If you haven't figured it out yet, this recipe is once again from Hannah Freese, RD who provides lots of recipes to lower your sugar intake, lower your intake of unhealthy oils, as well as processed refined carbs. I'm trying to incorporate more of her recipes during "special occasions". I usually resort to this blog for all my favorite recipes for "special occasions". But I have to admit, I have A LOT of "special occasions". During this time of covid, my highlight in life is basically eating something yummy and sharing it with my family which, in my mind, is a "special occasion". I look so forward to our weekly gatherings with Lauren and Nick & family. We have so much fun together and it seems like the grandkids are changing so fast. Our 4-year granddaughter didn't speak any English when she moved here and now speaks fluently after only six months. It's amazing to see how she has adapted to American life. And part of that American life - which I believe I taught her - is having dessert with dinner. Last week after dinner, she came up to me and quietly asked me, "Grandma, can you show me what's for dessert?" I never even mentioned we had dessert, she just assumed it. That's when I realized I needed to change my reputation. We've been having a lot of desserts ever since Halloween and they have been loving every minute of it. Who wouldn't, right? That's why we're detoxing now...They always love helping me prepare food for dinner so it's easy to include them in the process. I remember learning when my kids were little that if kids help prepare their own food, they will be more inclined to eat it. We do not have any trouble in this area. "I'll take three plates of Apple Crumble Slices, please".
You would never guess that this dessert is not ladened with added sugar. But don't tell the kids that. Just let them make this recipe and you'll have a highly successful dessert to offer your guests for any "special occasion". I did.
4 servings
1/2 cup canned coconut milk
1/2 cup ground flax seeds
1 tsp. cinnamon
2 apples, medium; cored and sliced into 1/2-inch wedges (I used Fuji apples)
1. Preheat the oven to 350 degree F. and line a baking sheet with parchment paper.
2. Add the coconut milk to a bowl.
3. Add the flax and cinnamon to a second bowl and stir to combine.
4. Place the apple wedges into the coconut milk, in batches if needed, and toss to evenly coat the apples. One apple wedge at a time, press each side into the flax mixture. Gently tap off the excess flax, then transfer to the prepared baking sheet.
5. Repeat with the remaining apple wedges.
6. Bake for 20-24 minutes carefully flipping halfway through or until the apples are tender. Let the apple wedges cool slightly on the pan before serving.
7. Serve with a dollop of whipped cream on top of each wedge and enjoy!
