This is a homemade sausage recipe that is simple and doesn't involve stuffing meat into a casing. You make these sausage patties out of your favorite meat such as ground turkey, ground chicken, lamb, beef or pork. I used chicken on mine; not ground chicken breast but just chicken because after my post yesterday, you now know that fat is good for you. This is what I am learning on Hannah Freese, RD's diet and couldn't be happier. This year on Thanksgiving, I will be eating the skin of the turkey. Yes, I said it out loud! Fat is good for you. The bad part is that added sugar is not. The "Dirty 6" oils of soybean, safflower, sunflower, canola, corn, and cottonseed oils are not and are in fact, toxic oils that damage a woman's metabolism. And it's hard to find processed foods without these ingredients in them like chicken broth or sausage. I have found a brand of sausage at my grocery store that fits the criteria called Applegate but Hannah provided this recipe for us to use in case we don't find one. I made it today and loved it. I had it for breakfast with an egg and I thought it tasted just like any store-bought sausage. I was so surprised. I may experiment with other types of ground meat but ground chicken was perfectly delicious. Three small patties make one serving so I froze the other three servings for future. This is another recipe I'm sure Bruce will also like when he wants to change up his occasional bacon and eggs breakfast. It's always good to have variety, right? This breakfast choice will fill you right up, too, without any added sugar or toxic oils. Go for it!

5. Serve with your favorite breakfast item or cook greens in the same pan after you remove the sausage and eat with cooked spinach, kale or other leafy greens.

1 lb. of your favorite ground meat such as ground turkey, ground chicken, lamb, beef or pork
1 apple - a tart apple such as Granny Smith or Honeycrisp works best for this recipe
1 Tbsp. fresh ginger, peeled and grated
1 Tbsp. Italian seasoning
1 tsp. apple cider vinegar
1/2 tsp. sea salt
1 Tbsp. olive oil
1. Place the ground meat in a large mixing bowl. Pat it with a paper towel to remove any excess moisture.
2. Peel, core and grate the apple using a box grater. Squeeze out the excess juice from the apple and discard. (I grated it onto a paper towel and dabbed the moisture out of the apple)
3. Add the apple to the meat along with the ginger, Italian seasoning, apple cider vinegar and salt. Gently mix to combine, then form the meat mixture into thin patties, approximately 4 inches in diameter.
4. In a large skillet or frying pan, heat the oil over medium-high heat. In batches, cook the sausage patties for about 2 - 3 minutes per side or until golden brown and cooked through.
5. Serve with your favorite breakfast item or cook greens in the same pan after you remove the sausage and eat with cooked spinach, kale or other leafy greens.
