Our local store, Metropolitan Market, is having their Peach-O-Rama again and the peaches are incredible. The peaches are picked from the tree and put into the shipping boxes within minutes and then shipped to the store immediately and we are eating them within hours of them being on the tree. So, we are eating a lot of peaches right now. Last year, I featured peach cobbler during this same time of year during Peach-O-Rama. This year, I hosted a birthday brunch for my brother's 50th birthday over the weekend so I decided to make bellini drinks which is Prosecco (Italian sparkling wine) and peach puree. My neighbor served these drinks at our neighborhood social which is where I got the idea.
It is basically 2:1 with prosecco to peach puree.
For one drink:
1/2 cup prosecco
1/4 cup peach puree
We went through 2 bottles of prosecco for 12 people (not everyone had a drink but then many had more than one drink...) We used wine glasses since we only have two champagne flutes but using champagne flutes would be more appropriate. I bought peach puree from Metropolitan Market, which can actually be hard to find if you don't want to make your own peach puree
If you make your own peach puree, then make simple syrup (1 part sugar to 1 part water) and use 1 part simple syrup to 2 parts peach puree to make the peach puree. I took the easy route and just bought my peach puree since I was too busy getting ready for the party, plus we went to two Mariner games this weekend for Ken Griffey, Jr's Hall of Fame induction celebration and jersey retirement ceremony
plus it was Seafair weekend with the Blue Angels performing everyday this weekend. We went down to Lake Washington on Friday to watch them practice and to watch the hydroplane time trials.
Needless to say, it was a very busy past 3 days so no time to puree my peaches. However, my bellini drinks were a big hit and everybody loved them. Plus, they are easy to make, only measuring two items to make one drink. They are a perfect, refreshing summer drink. Prosecco is more smooth than the French champagne with not quite as much of a bite that champagne has. It's makes for a perfect combination with peach nectar. The word bellini is named after an Italian renaissance painter named Giovanni Bellini and was created by an Italian bartender in the 1930'or 40's at Harry's bar in Venice, Italy, a bar often visited by Ernest Hemingway, Sinclair Lewis and Orson Wells. I plan to mark this recipe down as another Italian favorite. For our brunch, I served our favorite egg dish, hoppelpoppel
and also made banana bread so I would have something to put candles on so we could sing Happy Birthday.
Everybody else brought other breakfast items which made a wonderful selection for our brunch. After our birthday brunch celebration, we were all free to go out and play for another fun-filled summer day.
