Chicken Satay with Peanut Sauce

Memorial Day weekend is about barbecuing so today we made chicken satay.  Not the usual hot dogs or burgers but almost just as easy.  Or if you are venturing out on a picnic for Memorial Day, these are perfect.  I've packed these up for picnics before and they work great since they are on wooden sticks making them easy to eat. If it isn't barbecuing weather where you are, you can also broil them in the oven and they turn out just as well.  The peanut sauce is the frosting on the cake with these marinated chicken skewers. 4 servings (2 skewers each) 8 - 8" wooden skewers 1 pound skinless, boneless chicken breasts, cut into 8 strips 1 Tbsp. brown sugar 2-1/2 Tbsp. soy sauce 2 tsp. fresh ginger, diced 1 tsp. grated lime rind 1/4 tsp. crushed red pepper 2 cloves garlic, minced 1.  Soak wooden skewers in water.  This prevents them from burning during barbecuing. 2.  Combine chicken and the rest of the ingredients. 3.  Let stand 10 minutes. 4. Pimm's Punch

Yesterday was Mother's Day so our rule was that all the men had to prepare our meal and serve the moms.  There were 6 moms over for dinner last night so the men had their work cut out for them.  There were a total of 18 hungry people at our house but the men ended up doing a great job.  I was impressed, to say the least. I had a hard time not doing any food preparation, it's just not in my nature...so I contributed a special cocktail for the d ay,   Pimm's Cup .  But with so many people coming, I knew as a mom, it would not look good for me to be working so hard making individual drinks for everyone so I decided to make pitchers of Pimm's Cup. It looks like ice tea, actually, but it's more like a sangria.  Our visitors were pleasantly surprised at it's refreshing taste and it went down easy.  It's not a drink that appeals just to moms.   People were soon helping themselves to seconds. Happy Mother's Day

This year was a Mother-Fest!  Not only was I able to spend the day with both my kids at home but also with 5 other wonderful moms.  Above is me with my sister, Barbara, to the left and Jennifer, my sister-in-law, to the right.  Next to Jennifer is her mom, Gail, who is visiting from Boise.  Next to Barbara is Monica, her daughter-in-law, and next to Monica is her mom, Anne, who also live in the area.  We had a Mom-Fest at our house for Mother's Day and it was a salute to all moms. There was lots of picture taking going on and lots of mom-love filling the air. And a little bit of ping-pong competition. The best part was that all the men prepared the food and served us moms. Yes! Bruce barbecued teriyaki flank steak and everybody else brought salads, bread, appetizers, and dessert. Dessert was a chocolate coconut cake and lemon cake .
