Crockpot Chicken and Dumplings


We are still in need of comfort food after watching the tragic loss of our Seahawks in the Super Bowl on Sunday.  It still has been the talk all week because of their unbelievable loss, even the Patriot fans are talking about the Seahawks worst play call in Super Bowl history.   The only thing Bruce and I can do is to come home from work, still bummed out and eat our comfort food. Chicken and dumplings is our ultimate comfort food.  I always make it in the crockpot on work days so we can come home to an immediately hot dinner.  The house smells great when you walk in the door and it is a hardy, fulfilling meal that is just what you need after a Super Bowl loss.

Serves 4

1 whole chicken
2 cups chicken broth
8 carrots, peeled and sliced

Dumplings:

1 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
2 Tbsp. oil

1.  Rinse chicken and place in crockpot.  Pour in chicken broth.  Place carrots in crockpot with chicken, place lid on crockpot and set on low.

2.  Let cook on low for approximately 8 hours.

3.  Make dumplings:
     

Whisk flour, baking powder, and salt together in mixing bowl.



Combine milk and oil in a separate bowl.  Add all at once to dry ingredients.  Stir just until moistened.


4.  Turn crockpot up to high.  Drop dumplings from a tablespoon on top of bubbling chicken.  Replace lid and cook for 15 minutes.


After 15 minutes, the dumplings will double in size and look like this.

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Waking Up in Vegas

We went to her 78th performance which was her second-to-last Las Vegas residency show entitled "Play".  That was perfect for us because we went to Vegas simply to play.  Her concert was a great finale for us because it was high energy and full of silliness, just the way Katy Perry is.  And we were feeling it after three nights in Las Vegas.
