Holiday Dessert


Tomorrow night is our Christmas party and the desserts are ready.  I could easily eat dessert first which is why it is so easy to prepare dessert before I prepare anything else.  If we don't have anything else to eat at least we'll have dessert. I bought a tiramisu cake at Costco and decorated it so it doesn't look like a Costco cake.  Do you think it looks like a Costco cake?  I actually have a great recipe for tiramisu cake that I've made before but I didn't have time to make it for tomorrow so I bought one.  I also made some chocolate mousse for a couple of the guests who are gluten intolerant.



I made a few extras in case other guest may want some.  So, we have plenty of dessert.

Our main course is the delicious as always mustard crusted beef tenderloin which you cannot go wrong with.  Then, I'm going to make twice baked potatoes and roasted carrots and parsnips.  I have a very festive cocktail to make that I'll post later and some delicious appetizers.  But for now, I must get going on my list.



This list is already outdated but then I just write onto it with all the additions.  I've changed the vegetables from green beans to roasted carrots and parsnips.  Aren't these carrots gorgeous?  I'm sure they'll be delicious.



Tomorrow I will just fix all the food on my list.  Today, I did all the shopping which took most the day.  Costco is always such an ordeal for me.  I really do not like that place even though I know most people LOVE it!  It really blows my mind how much people buy there and not to mention all the STUFF they have there.  I always end up wasting so much time looking at all the STUFF - STUFF I don't need.  I could have bought a life- size nutcracker for $250!  I wish I would have brought my camera along to take pictures of all the STUFF at Costco.  What a trip that place is. It's the epitome of over-consumerism.  I bought the cake there but actually I could have bought all my Christmas cookies there, all my appetizers there, pre-cooked potatoes, almond roca, cocktail mix, etc.  You really don't have to cook anything at all.  I could write a whole blog post on Costco and why I cook my own food and special recipes.  But I don't have time for that tonight.  I must get on with my list… PS, the carrots above did not come from Costco.  They are fresh, local and organic.

Meatloaf by Mark Bittman

Once again, I turned on the television yesterday and saw that Mark Bittman was on the Today show and was making his version of  meatloaf .  This must be meatloaf season.  It was surprisingly similar to the  Pioneer Woman's version  who was also recently on.   I was a little surprised of his version because Mark Bittman is into healthy eating and has lost a lot of weight and improved his health by changing his diet which he writes about in his book,  Food Matters .  His meatloaf recipe also included bacon and cheese!  I must be doing something wrong.  The thing to remember, which he writes about in his book, is that you can eat healthy without going extreme or changing your whole life.    If you don't know who Mark Bittman is, he is a food writer and a four star chef with multiple cookbooks who loves to eat but changed his food philosophy to improve his health.  He tells his story in Food Matters and provides a plan for responsible eating that covers a no-nonsense rundown on

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Spinach Stuffed Cod

Last night, I was in the mood for a healthy dinner so decided to experiment with a recipe I found from a blog called Creative in My Kitchen . Lauren and Ari brought us French cookies back from their trip to Paris and I basically inhaled them. They were so good! We were cat-sitting their two cats while they were gone.
