Grilled Open Face Sandwich with Cilantro Aioli


If you like making little individual pizzas with your family, you'll love making these. My kids love these sandwiches. We made these for Nick's team dinner when he played basketball in high school (along with lots of macaroni salad, brownies and Gatorade).


I refused to make the typical, boring spaghetti dinner that all the other mom's did each week. Don’t get me wrong, we love spaghetti but it’s sort of boring.  And Nick loved these sandwiches so this meal was kid-approved. Then, a couple years ago after he graduated from college where he was their main starting pitcher, he invited his college baseball team's pitchers to his house for dinner when they were traveling to a local college near his house and he made these sandwiches for them (after calling me for "that recipe"). It's a good (and healthy) alternative to pizza and fun to make. The green mayonnaise is always a good conversation piece.

Makes 2 servings

2 ciabatta rolls
cilantro aioli (recipe below)
4 slices turkey deli meat
4 slices ham deli meat
4 roasted red bell peppers strips
4 slices provolone cheese

Find a good quality brand of ciabatta rolls and slice into halves.


Spread each half with cilantro aioli.


Layer each slice with turkey, ham, roasted red bell pepper and top with a slice of Provolone cheese.

Cook under the broil until cheese is toasted and melted for a bout 3-4 minutes.


Don't let the green mayonnaise freak you out! 

                                                      Cilantro Aioli

3/4 cup mayonnaise
3/4 cup loosely packed cilantro leaves
1 Tbsp. fresh lime juice
1 tsp. soy sauce
1 clove garlic


Place the mayonnaise, cilantro, lime juice, soy sauce, and garlic in a blender or food processor. Blend until smooth.

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Waking Up in Vegas

and just like that...we were Waking Up in Vegas.   Just like the Katy Perry song. We went to her 78th performance which was her second-to-last Las Vegas residency show entitled "Play".  That was perfect for us because we went to Vegas simply to play.  Her concert was a great finale for us because it was high energy and full of silliness, just the way Katy Perry is.  And we were feeling it after three nights in Las Vegas. "Get up, and shake the gutter off your clothes now, That's what you get for waking up in Vegas".    Here's what she said about her show: "I created this show after the birth of my daughter, Daisy Dove. When I met her, it was like all the love I was ever searching for finally showed up. This show is for everyone’s inner child and for the hope that maybe if we could all see life through the eyes of a child, we would be free.
