Green Smoothie with Fresh Fruit and Vegetables


I picked some lettuce from the garden today and some green onions (along with an egg that one of the chickens laid in the garden...)  The lettuce is abundant. This is the salad season for sure but you can only eat so many salads so I discovered a new recipe so I can eat lettuce for breakfast, too.  It's a green smoothie.  Perfect.  Here's the recipe-


Green Smoothie



1 bag of freshly picked, organic leaf lettuce
3  stalks of celery
2 medium apples, cored and chopped
1 banana
juice of 1 lemon
1-1/2 cups of coconut water
a few ice cubes


1.  Put all ingredients in a blender and blend until smooth.  


This recipe has 395 calories, 14 grams of fiber, with a whopping 2,500mg potassium!  When you consider the recommended daily intake for potassium is 4,700 mg, this is a good way to start out the day.  (A banana has 400 mg)  The trick is using coconut water, which is a very popular item in stores right now.  According to the Nutrition Facts label on coconut milk, a serving is 8.5 oz which has 45 calories and 515 mg potassium.  Coconut water tastes good plain but its perfect for a smoothie.   Not as sweet as juice and less calories but still a nice flavor.  I actually drank the whole 24 ounces, too.  I think I'm going to make these more often with all the lettuce we have around here.  Try it, you'll like it!

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Waking Up in Vegas

We went to her 78th performance which was her second-to-last Las Vegas residency show entitled "Play".  That was perfect for us because we went to Vegas simply to play.  Her concert was a great finale for us because it was high energy and full of silliness, just the way Katy Perry is.  And we were feeling it after three nights in Las Vegas.
