Today, I am remembering my mom who passed away 2 years ago but I still think of her all the time and wish I could still call her and tell her about all my adventures. It's because of her I became a dietitian because she was a GREAT cook and she was always reading about nutrition from books by Adelle Davis and Prevention magazine. She was always providing us with delicious meals and traditions growing up. Some of my favorite food memories were making homemade fudge which basically took the whole evening and it was such a big deal to us, she made a delicious walnut bread for special occasions, fruitcake for Christmas, homemade jams and preserves, Dutch Babies, fruit pizza, stuffed cabbage rolls, hamburger twirls, polish sausage casserole, goulash and countless other recipes I can't even list here. Many of us in the family took on the tradition of making many of her recipes as she got older. She always loved hearing about what I was up to and what was going on with her grand kids. Nick and Lauren were her favorite topics, of course. Not only was she a great mom but she was even a greater grandmother. She took care of my kids when they were babies when I worked so they developed a deep bond that lasted until she died. Nick would often take her out to lunch after he was in college, such a special treat for her and Lauren would occasionally walk over to her apartment to visit her from college at Seattle U. A month before she died, Nick and I, my mom, and two of my sisters went to Alaska on a cruise because my mom always wanted to see Alaska since she was an adventurer at heart. We had such a good time and I'm so glad we did that.
Once again, I turned on the television yesterday and saw that Mark Bittman was on the Today show and was making his version of meatloaf . This must be meatloaf season. It was surprisingly similar to the Pioneer Woman's version who was also recently on. I was a little surprised of his version because Mark Bittman is into healthy eating and has lost a lot of weight and improved his health by changing his diet which he writes about in his book, Food Matters . His meatloaf recipe also included bacon and cheese! I must be doing something wrong. The thing to remember, which he writes about in his book, is that you can eat healthy without going extreme or changing your whole life. If you don't know who Mark Bittman is, he is a food writer and a four star chef with multiple cookbooks who loves to eat but changed his food philosophy to improve his health.
