Apple Hand Pies

We have these a lot at our house so when we had these again on Thanksgiving, I realized that I have never posted the recipe.  I just made up this recipe for the grandkids because it's so much easier for them to eat pie like this.  It's sort of like a pop tart.  Nick requested these on Thanksgiving because the grandkids don't like pumpkin or pecan pie, the two types of pies I make for Thanksgiving and these are their favorite dessert.  They usually help me make them and they think it's great fun.                            So, we made them again for Thanksgiving.  We ate them on the Wednesday before Thanksgiving and again on Thanksgiving so it was an extra special time for them.                         Since the kids spent the night before Thanksgiving, we had barbecued cheeseburgers for dinner and I  brought out some of the "sides" that I'd already prepared for Thanksgiving to get a head start.  We hardly even put a dent in all the food on Thanksgiving so

Thanksgiving Leftovers

Have you all come out of your food coma yet?  I hope so.  We had seven people here for our Thanksgiving and it was a whirlwind.  The two grandkids were nonstop but then isn't that how grandkids are suppose to be?  The grandkids had a sleepover the night before so we had a full day of Thanksgiving playtime.  Lauren, Nick and Sachiyo eventually made their way over for our Thanksgiving dinner and it was a great time.  All the food was superb, of course.   I love Thanksgiving food. Our turkey was grand.  We did our usual  wet brine  and then cooked it on the Traeger.  The grandkids were intrigued with all the hoopla going on about the turkey. Of course, their favorite part of the meal was the turkey and the  Rhodes Bake-and-Serve Rolls . Crispy Prosciutto & Leek Soup

Today, wa s a soup-kind-of-day...you guessed it:  rain, rain, rain.  But this dinner tasted so good, who cares about the rain?   I'll probably make this recipe again for a holiday celebration because look how festive this looks.  It has the red and green holiday theme going on. I really love the crispy prosciutto that you sprinkle on top to serve it. Along with the chopped parsley, it gives it that red and green holly, jolly feeling.  I think it would be perfect for a first course during Christmas dinner.  This was a pretty easy recipe, too, and so flavorful. This is a recipe from   Hannah Freese, RD  so you know it uses lots of healthy veggies in it and uses full fat coconut milk to make it creamy.  It doesn't have a "coconut" flavor at all, though.  Since it uses full fat coconut milk, it is very filling, satisfying and dairy-free.  You won't need crackers to go along with this recipe.  The crispy prosciutto is way better than crackers.  On Hannah's Frees

Quinoa & Edamame Salad

, I love salads with edamame (soy beans) and I buy them frozen at Trader Joe's.  They are great to throw into salads or just eat plan.  You'll often see them still in their shell as appetizers at restaurants which we also love and they are very popular in Japan.  I made this salad last night for a family dinner and thought it also looked perfect for a Christmas salad because it's red and green. I got it from  Hannah Freese, RD  but I changed it a lot from the original.  I mainly changed it because when I went shopping at Trader Joe's, the Italian parsley was in the spot where the cilantro was suppose to be and I didn't notice until I got home.  (It looks like cilantro.)  So, I used Italian parsley even though the recipe called for cilantro. The recipe also says to serve it warm but I always make my salads ahead of time so mine wasn't warm and it still tasted great.  And then I used lemon juice instead of lime juice since I wasn't using cilant

Thai Red Lentil & Spinach Curry

We had this for dinner last night after three days of rain so we needed a dinner to spice things up.  This recipe hit the spot.  It uses Thai Red Curry Paste that makes the recipe super easy, yet super tasty.    I use this same curry paste in  Thai Chicken Green Curry , a recipe that I make a lot.  It adds such a great flavor with minimal work so I highly recommend using it.  I got this recipe from  Hannah Freese, RD  so you know that the paste has all natural ingredients because her diet does not include any processed foods.  I can definitely feel the difference eating this way.  I actually put away all the Halloween decorations and immediately got out the Thanksgiving decorations in just 2 days. I have so much more energy eating this way.   It's the same thing that happened last year when I packed up all the Christmas decorations in one day and Bruce was shocked how much I got done. Halloween Jack-O-Lantern Oranges

Happy Halloween!  After a pandemic Halloween last year, I hope you were able to make up for it this year.  We did!  Our Halloween was such a whirlwind of excitement because the grandkids are at a perfect age of 3 and 5 and are starting to get the drift of what this is all about.   We actually "practiced" Halloween before the big day so as not to overwhelm them. We got out the candy and started practicing "trick-or-treating" so they understood what it's all about.  I would hide behind a door, like in the bathroom or a closet, and they would come up and knock.  Then I would open the door and they would say "trick-or-treat!" and I'd give them some candy to put in their bags.  Or I would let them take candy and put it in their bags.  They LOVED playing that game and I ended up hiding behind every door in the house.  We've answered the door on Halloween before when little kids just stand there and don't know what to do while the parents are stan
