Broccoli and Bow Tie Pasta

Tonight, I baked some beef ribs for dinner and made this pasta salad from Ina Garten who is posting recipes from your pantry and fridge for us stay-at-homers.  I actually had everything to make this one since I love bow tie pasta and always have some in the cupboard.  I had a little bit of broccoli left, too.  Perfect.  I even have frozen broccoli for when my fresh runs out since I'm trying to keep stocked up on healthy foods to keep my immune system strong.  I'm also taking vitamin D and vitamin C everyday, which I did even before the coronavirus hit but now they say those two are especially important to fight the virus.  So, take your vitamin, folks! Crispy Mustard Chicken with Salad Greens

This recipe has turned into my go-to recipe for fried chicken, even though it is not fried chicken but it satisfies my urge for it - another comfort food.  I was getting my taste buds all ready for real Southern fried chicken next month when we have our annual Masters Weekend  which involves eating Southern food all weekend.  But now that has been cancelled like everything else because of the Coronavirus.  I'm so sad.  It's still hard to believe it has come to this.  Our state closed restaurants and bars five days ago (except for take-out food) and then most everything else followed like beauty parlors, my physical therapy and massage clinic, a lot of retail stores and malls.  There really isn't any reason to go out anymore.  We are just waiting for our state to give the order to stay at home, like California, Illinois, Connecticut, and New York which means only going out to the grocery store, when necessary.  (Officially, it means all "nonessential" workers st

Irish Soda Scones

I'm still busy making my comfort foods and today it was scones.  I have always loved the scones at Starbucks and I'm a real sucker for getting one with my coffee.  There is just something so comforting about that combination.  I saw this recipe on  Martha Stewart and I thought they'd be perfect for a pre-St. Patrick's Day treat.   I changed some of the recipe, mainly this wedge shape.  I don't think scones are really scones unless they are this shape.  Also, they don't really need the icing drizzled on them because they are great without it.  We ate our first one right out of the oven with a big blob of butter and it was wonderful!  Instant comfort. I went ahead and made the icing and drizzled it over the scones, as the recipe instructed so this really makes them stand out from  Irish Soda Bread .  It's always nice to have a few varieties of Irish Soda Bread, right?  These are definitely scones, not bread and I would make these anytime other than St

Chicken, Bean and Vegetable Soup

We are in the epicenter of the coronavirus virus here in Seattle and there is constant news bulletins and recommendations coming out everyday.  It is getting rather tiresome, I must admit.  We had to cancel our Mariner ticket party  and were so bummed out about that  (The health department is recommending people over the age of 60 avoid crowded environments or what they call "social distancing".)   It's exhausting getting up every morning and reading the newspaper on all the latest developments.  And in the evening, the news reports go on and on about it.  Usually, this is my favorite time of the year, but this virus is certainly changing what spring is all about.  Our Mariner ticket party has always been such a great way to begin our spring, as well as our much anticipated beginning of baseball season.  And now, Bruce and I have to figure out how to do the ticket selection process on-line.  It's really not that difficult, as this is how most season ticket groups r
