Dill Bread



This recipe has been in our family since 1971.  Not exactly my family but my sister, Barbara's family, and I can't even count how many times she has served this at family gatherings.  It's always been everyone's favorite but then, it's homemade bread, for goodness sake. This bread is good served with a seafood dish, soup, stews, meats, or any dish really.  Barbara made it for us when we returned from our Italy trip, along with some homemade split pea soup and boy, did it hit the spot!  I'll never forget how good that meal tasted after a 10 hour flight from Amsterdam and being on the road traveling for a whole month.  I made two loaves of this bread yesterday (it freezes well, too) along with my roasted chicken recipe for a lovely Sunday dinner.  If you are picking someone up from the airport after a long trip, do them a favor and make this recipe along with some split pea soup.  It's perfect until they can actually go grocery shopping and get settled into a regular routine again.  

Makes 1 loaf

1 cup cottage cheese
2 Tbsp. sugar
1 Tbsp minced, instant onion
1 Tbsp. butter
2 tsp. dill seed
1 tsp. salt
1/4 tsp. baking soda
1 egg
1 pkg. yeast softened in 1/4 cup warm water
2-1/4 cup to 2-1/2 cup flour

1.  In a mixer bowl, combine everything except yeast, water and flour.



2.  Add yeast softened in water.


3.  Add flour, beating well after each 1 cup addition with electric mixer to form stiff dough (or you can do it by hand with a little more effort.)


4.  Turn out on a floured surface and knead for about 3 minutes.


5.  Place in a greased bowl and let rise 50-60 minutes covered with a cloth. 




6.  Once dough has raised


punch down and place in greased bread pan.  You can also place in a round casserole or cake pan if you want to make a round loaf.  (I doubled the recipe to make two loaves)


7.  Let rise in the greased pan for 30-40 minutes.



8.  Bake at 350 degree oven for 45-50 minutes.  

9.  Remove from oven and pan; brush tops with butter.  Let cool before slicing. 


You might not be able to wait until it cools, however.  There's nothing like warm, homemade bread with lots of butter.  Comfort food in all its glory.

Meatloaf by Mark Bittman

Once again, I turned on the television yesterday and saw that Mark Bittman was on the Today show and was making his version of  meatloaf .  This must be meatloaf season.  It was surprisingly similar to the  Pioneer Woman's version  who was also recently on.   I was a little surprised of his version because Mark Bittman is into healthy eating and has lost a lot of weight and improved his health by changing his diet which he writes about in his book,  Food Matters .  His meatloaf recipe also included bacon and cheese!  I must be doing something wrong.  The thing to remember, which he writes about in his book, is that you can eat healthy without going extreme or changing your whole life.    If you don't know who Mark Bittman is, he is a food writer and a four star chef with multiple cookbooks who loves to eat but changed his food philosophy to improve his health.  He tells his story in Food Matters and provides a plan for responsible eating that covers a no-nonsense rundown on

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Waking Up in Vegas

We went to her 78th performance which was her second-to-last Las Vegas residency show entitled "Play".  That was perfect for us because we went to Vegas simply to play.  Her concert was a great finale for us because it was high energy and full of silliness, just the way Katy Perry is.  And we were feeling it after three nights in Las Vegas.
