Birthday Celebration


Last night, we celebrated my birthday at Palisade restaurant in Seattle with Barbara, Jim and Lauren on a beautiful, summer evening by the water.  It doesn't get much better than this.



I've always loved having my birthday in the summer.  I love hot weather, I love being outdoors, I love summer food, I love summer drinks and I love being by the water.  This restaurant is next to a marina which makes for some picturesque views.  And there was beauty every direction you looked.



We are making the most of my birthday week by renting a place on the water, too, just to make sure we get our fill since we're coming from a landlocked state.



Lauren came over to check out our digs before dinner and she approved. Palisade restaurant is just around the corner.



But this week is really more than just celebrating my birthday because our wedding anniversary is July 18th, Nick's birthday was July 8th, and Lauren's is July 25th.  So, we have 7 days to cram in celebrating 4 big life events!  Nick and Sachiyo are flying in from Japan today so we will see them shortly. It won't be any problem coming up with ideas to celebrate everything while we're in town. Dinner last night was a good start.



Lauren had a lemongrass mojito and I had a passion fruit mojito.  Mint drinks are the best on a hot day and Seattle is having 90 degree weather this week - need I say more?  Although, I was intrigued with Barbara's pink lady with lavender sugar rim.



We started with an appetizer tower - literally.  It was called the Pupu Tower of oven roasted crab cakes, flash seared teriyaki tenderloin and grilled garlic prawns.  We did not hesitate to dig in!



For dinner, I ordered the Cedar Plank Seafood Trio of honey-glazed king salmon, seared scallops and tiger prawns.  It came with herb potato puree which was so delicious and oven roasted tomatoes, fennel and mushrooms.



I really want to go back, though, because others at our table ordered things I want to try like the Applewood Smoked Prime Rib, Beechers Flagship potato gratin, Creamed Spinach and horseradish beignet.  Even the Caesar salad was unique - made with romaine and Tuscan kale.  We did try desserts...I ordered the Raspberry White Chocolate Bread Pudding made with pecan shortbread streusel and Olympic Mountain vanilla rose ice cream which was DELICIOUS!  Lauren helped me eat it, but I think I ate the most.  I loved the ice cream.  I couldn't stop eating it but fortunately the portions were not outrageously large. Just right.



And today, we woke up to another beautiful day that will continue with our celebrating.

Meatloaf by Mark Bittman

Once again, I turned on the television yesterday and saw that Mark Bittman was on the Today show and was making his version of  meatloaf .  This must be meatloaf season.  It was surprisingly similar to the  Pioneer Woman's version  who was also recently on.   I was a little surprised of his version because Mark Bittman is into healthy eating and has lost a lot of weight and improved his health by changing his diet which he writes about in his book,  Food Matters .  His meatloaf recipe also included bacon and cheese!  I must be doing something wrong.  The thing to remember, which he writes about in his book, is that you can eat healthy without going extreme or changing your whole life.    If you don't know who Mark Bittman is, he is a food writer and a four star chef with multiple cookbooks who loves to eat but changed his food philosophy to improve his health.  He tells his story in Food Matters and provides a plan for responsible eating that covers a no-nonsense rundown on

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Spinach Stuffed Cod

Last night, I was in the mood for a healthy dinner so decided to experiment with a recipe I found from a blog called Creative in My Kitchen . Lauren and Ari brought us French cookies back from their trip to Paris and I basically inhaled them. They were so good! We were cat-sitting their two cats while they were gone. They liked lounging in the strangest places...  I found one of their toys while I was cleaning so Lauren stopped by last night to pick it up on her way home from work. I was experimenting with this recipe which originally called for chicken breast but I thought it sounded good to substitute fish instead since I'm always looking for good fish recipes.
