Happy Mother's Day


Happy Mother's Day to all the moms out there, this day is for you.  I am remembering my mom on this day, although it isn't just one day a year I think about her.  She passed away in 2009 so I like to always dedicate my Mother's Day post to her.  We had many good times together since we liked a lot of the same things. (except sewing which I could never do very well and she could sew anything.)  She liked the simple things like going out for coffee or the not-so-simple-things like going out for high tea.



She only lived a couple blocks from this hotel which was known for it's high tea so we had to try it out after she moved there, of course.   But most the time we would just go out for coffee or something simple.  She just liked being around her family and it didn't really matter what we did. We always had things to talk about, no matter what.  As the years go by, I can tell that I will probably be just like her in my old age.  I just want to be around family, too, and it doesn't matter what we do.  To just hang out. I remember sometimes I would pick her up and we would drive around looking at things.  She loved that. In Seattle, there are lots of interesting places to go and things to look at.  I even have "the tour" I do here in Boise when visitors come where we just drive around and look at things and every visitor that's been on "the tour" just love it (and they will usually say so when they sign our guest book that we have in our guest room.)  Maybe I'm just a good tour guide?  When you get elderly and can't walk far, a tour like that is perfect since it makes you feel like you've been all over the place!  So, that's what we use to do a lot.  Like I said, the simple things.  My mom was easily pleased so even giving simple gifts meant a lot to her.  From my family, it was usually art projects from the kids.  I framed a lot of art or photos to give her as gifts and she loved them all.  It was never hard to think of something to give her for Christmas, birthdays, or Mother's Day.  I actually looked forward to times when I got to give her a gift.  I guess that is a trait of a mom, they always LOVE anything you give them.  So, today I'm thinking of you, Mom, and I'm giving you my Mother's Day post as my gift to you, like I do each year.  A gift I know you love, as always.

Meatloaf by Mark Bittman

Once again, I turned on the television yesterday and saw that Mark Bittman was on the Today show and was making his version of  meatloaf .  This must be meatloaf season.  It was surprisingly similar to the  Pioneer Woman's version  who was also recently on.   I was a little surprised of his version because Mark Bittman is into healthy eating and has lost a lot of weight and improved his health by changing his diet which he writes about in his book,  Food Matters .  His meatloaf recipe also included bacon and cheese!  I must be doing something wrong.  The thing to remember, which he writes about in his book, is that you can eat healthy without going extreme or changing your whole life.    If you don't know who Mark Bittman is, he is a food writer and a four star chef with multiple cookbooks who loves to eat but changed his food philosophy to improve his health.  He tells his story in Food Matters and provides ...

Two-Bean Soup with Kale

This hearty vegetarian soup warms up chilly nights.  Use any type of canned beans you happen to have on hand and add chicken or Italian sausage for a heftier dish, if you prefer. Makes 4-6 servings 3 Tbsp. olive oil 1 cup chopped onion 1/2 cup chopped carrots 1/2 cup chopped celery 1/2 tsp. salt, divided 2 cloves garlic, minced 4 cups vegetable broth, divided 7 cups stemmed, chopped kale (about 1 bunch) 2 (15-ounce) cans cannellini beans, rinsed, drained and divided 1 (15-ounce) can black beans, rinsed and drained 1/2 tsp. freshly ground black pepper 1 Tbsp. red wine vinegar 1 Tbsp. fresh rosemary or 1 tsp. dried rosemary 1.  Heat a large Dutch oven over medium-high heat.  Add olive oil to pan; swirl to coat.  Add onion, carrot, and celery, and saute 6 minutes or until tender.  Stir in 1/4 tsp. salt and garlic; cook 1 minute.   2.  Stir in 3 cups vegetable broth and kale.  Bring to a boil; cover, reduce heat, and simme...
