Baked Apples


Do you want your house to smell like fall but don't want to go through all the effort to make an apple pie?  Then baked apples are your answer and they are so easy.  During the days of little time, I use to make these by coring the apples and sprinkling some sugar and cinnamon over the apples.  Then bake in the oven for about an hour.  Now that I like to experiment I'm using a little more than just sugar and cinnamon.  This is my favorite combination but you can still add raisins, currents, cranberries or whatever you like.  And, of course, they are perfect served with ice cream.

4 apples that are good for baking such as Granny Smith, Fuji, Braeburn, Golden Delicious, Jonathan, Honeycrisp, Rome, Pink Lady or Gala ( I used 5 apples because I had an extra apple sitting around looking lonely)

1/4 cup old fashioned oats
1/4 cup brown sugar
1/4 cup unsweetened coconut
1/4 cup nuts such as walnuts or pecans
1 tsp. cinnamon
1/4 tsp. freshly grated nutmeg
1 tsp. butter per apple
1 cup apple cider

1.  Preheat the oven to 375 degrees.

2.  Slice a thin layer off the top of the apple and core the apple.




3. Set the apples in a baking dish. Mix the remaining ingredients except the butter and apple cider.

Using a fresh nutmeg really is what makes this recipe so delicious, I think. The smell is incredible. It smells like the holidays.




4. Stuff the holes with the oat mixture and mound slightly on top of the apples. Sprinkle a slightly rounded quarter cup around the bottom of the baking dish. This will help thicken the cider into a syrupy sauce. If using cranberries or raisins, scatter around the base of the baking dish.

5. Pour the cider around the apples (but not on top), and then top each apple with a teaspoon of butter.

6. Cover the apples loosely with foil and bake for 20 minutes. Remove the foil and continue baking baking for another 10-20 minutes or until you can poke a knife through the apple with no resistance.




7. Serve warm with ice cream.

These baked apples taste just like the filling of apple pie! You can still make an apple pie because fall is not complete without one! There's still time, we've had ours.

Meatloaf by Mark Bittman

Trader Joe's Gluten-Free Oatmeal, Peanut Butter and Chocolate Chip Cookies

I don't have very many gluten-free cookies on my blog because quite frankly, I usually don't like gluten-free.  But occasionally, I do find a good recipe and this is one that is from the back of the Trader Joe's oatmeal and it's a good one.  My friend brought some over to our house last weekend when Nick and family were here for our birthday celebrations  and we all loved them. Waking Up in Vegas

We went to her 78th performance which was her second-to-last Las Vegas residency show entitled "Play".  That was perfect for us because we went to Vegas simply to play.  Her concert was a great finale for us because it was high energy and full of silliness, just the way Katy Perry is.  And we were feeling it after three nights in Las Vegas.
