Are you looking for a quick, fast breakfast (that's not "processed") that's nutritious and delicious? I love oatmeal but I don't like cooking it in a pan (because I don't like washing the pan) and I can never get the timing right in the microwave, plus it's messy to clean. Instant doesn't taste as good or have as much fiber. So, the solution... Overnight Oats. Overnight oats are just oats soaked overnight that absorb the liquid you put them in – any kind of liquid you like. The most common mixture is equal parts raw rolled oats and milk. Put in the fridge overnight (uncovered or covered, your choice) and let ‘em soak up the liquids.
That’s the base, and toppings are endless. Add the toppings the night before or the next morning – either way works. Just don’t put anything in you don’t mind getting soggy (i.e. crunchy cereals)
There is NO COOKING involved at all.
I like to heat them in the microwave in the morning for about 1-1/2 minutes and then pour ice cold milk over them. That's how I like them. My favorite toppings are blueberries and walnuts. I'm using frozen organic blueberries now since fresh are not in season anymore. I add them to the oats before I microwave. But you can add any fruit you like such as bananas (and peanut butter), peaches, or any type of berries. You can add your favorite crunchy granola for added crunch if you like. Experiment!
