Chocolate Trifle

The star of our Christmas dinner this year was the dessert, a chocolate trifle.  Apparently, I made this once before and Nick remembered it and requested it for Christmas.  I use to make trifles a lot, before I started this blog, but I don't have any recipes here from the past 10 years which is amazing because I still make them a lot.  A trifle is a British dessert that entails three layers of a cake layer, a moisture layer (fruit/liquor, etc.) a creamy layer (custard, pudding, or fruit) and usually topped with whipped cream.  I made one for dessert this summer when my brother was visiting from out-of-town and we had everyone over for dinner.   This was a "mock trifle" without the cake layer since I was trying to stay on my  Hannah Freese, RD  diet.  You can use your imagination however you want to make one, really.  I like using my footed trifle bowl  that I've been using for years and Nick has remember it, too. Merry Christmas 2021

I hope you are able to celebrate the spirit of the season despite the continuation of a pandemic that just refuses to quit.  Please stay well and healthy in these trying times and I hope you are able to spend time with those you love.  And that is exactly what we are doing.  With both Nick and Lauren close by and most importantly, the grandkids also nearby, we spend every minute together as much as we can.  A three year-old and a five year-old bring a whole new dimension into the holiday season and we just can't get enough.   Merry Christmas to you all and a Happy 2022.

Slow Cooker Beef Shank Stew

This recipe really hit the spot tonight with temperatures dropping and some snow is even in our forecast.  Will we have a white Christmas?  We always keep our fingers crossed that we will.  Bruce has been wrapping presents today, mine were mostly done and already under the tree.  Our cat isn't too happy about that.  This was his favorite place to sleep.  What happened to my cat bed? Apple Hand Pies

We have these a lot at our house so when we had these again on Thanksgiving, I realized that I have never posted the recipe.  I just made up this recipe for the grandkids because it's so much easier for them to eat pie like this.  It's sort of like a pop tart.  Nick requested these on Thanksgiving because the grandkids don't like pumpkin or pecan pie, the two types of pies I make for Thanksgiving and these are their favorite dessert.  They usually help me make them and they think it's great fun.                            So, we made them again for Thanksgiving.  We ate them on the Wednesday before Thanksgiving and again on Thanksgiving so it was an extra special time for them.                         Since the kids spent the night before Thanksgiving, we had barbecued cheeseburgers for dinner and I  brought out some of the ...

Thanksgiving Leftovers

Have you all come out of your food coma yet?  I hope so.  We had seven people here for our Thanksgiving and it was a whirlwind.  The two grandkids were nonstop but then isn't that how grandkids are suppose to be?  The grandkids had a sleepover the night before so we had a full day of Thanksgiving playtime.  Lauren, Nick and Sachiyo eventually made their way over for our Thanksgiving dinner and it was a great time.  All the food was superb, of course.   I love Thanksgiving food. Our turkey was grand.  We did our usual  wet brine  and then cooked it on the Traeger.  The grandkids were intrigued with all the hoopla going on about the turkey. Of course, their favorite part of the meal was the turkey and the  Rhodes Bake-and-Serve Rolls .
