Thai Chicken Lettuce Cups

I haven't posted a recipe in long time because our kitchen/house is being remodeled but I wanted to post this recipe that I got from my neighbor after she invited us over for a neighborhood gathering.  The gathering was a memorial service for her dog, Emma, who recently pasted away. I wrote about my neighbor, Karen, here  a couple of years ago when she hosted a "Welcome to the Neighborhood" party at her house.  This year's party was on a slightly sadder note with the passing of her pup but she still put on a wonderful and welcoming event for us neighbors.  After we all arrived, we had a little ceremony for Emma where her ashes were buried and the above plaque was placed in her memory.  Karen told little stories about Emma while Alexa played Scottish bagpipe music.  It was so touching it was hard not to cry!  Then we went back into the house and enjoyed all the wonderful food that Karen had prepared for us.  She always prepares ...

Getting Our Italian Fix at Il Corvo

Today is Lauren's birthday and she has the whole weekend planned with her friends but today I got to spend her day on a very memorable lunch date. She has wanted to experience Il Corvo in downtown Seattle but they are only open for lunch, Monday through Friday, 11:00 -3:00 and she is always working. But today, she took the day off work so her first thought was "I can go to Il Corvo!" So we did. It is a "fast casual" type of place where you line up, order your food and then go sit at a table. The only difference with Il Corvo is that there is always a huge line, usually an hour wait. Today, it was a 1-1/2 hour wait. Why? Because it is just the best pasta in town, that's why!    We got there a little later than we planned because she opened her present from me first and that took awhile. Our 38th Anniversary Celebration

Is time going by fast or is it just me?  I just can't believe it has been 38 years since our wedding day.   We've lived in three different states, raised two children and now have two grandkids.  We are currently living in our fifth house and remodeling yet again to make this one our own.  Life has hardly been monotonous, that's for sure.  I guess you could say we make sure life does not get monotonous.  That is probably the main thing about the two of us that we have in common.  We like the spice of life or making the most of our current situation.   Right now, we don't have much at home with our house torn up with remodeling so we've been going out a lot.  The electricians have been replacing all our old wiring which makes quite the mess. Birthday Celebration

We are in the midst of a very busy month for our family since this month Lauren, Nick and I all have birthdays and Bruce and I have our anniversary. Plus, there's the 4th of July and also our grandkids have birthdays July 24th and June 30th. So, it's been non-stop around here. And our house is still under construction, so just add that in with everything else.  Below is our kitchen:  Lovely, isn't it?  I'm sitting at Starbucks right now doing this post because our house is without power while the electricians update the wiring in our house.  So, I figured it's a good time to post about my birthday.  We went to  Anthony's  on Pier 66 on the waterfront for my birthday dinner, one of our favorite places. They are known for their seafood (and for Mojo the Coho) and their food is incredible. This is Bruce's dish of fresh Ahi tuna with asparagus and rice.
